Hi Antoine,
I make out a list of random questions and ask my characters to answer them. Some of the questions are:
How are you?
Do you have siblings? If so, how do you feel about them? If not, how do you feel about that?
What is your favorite color?
Do you have pets? If so, how do you feel about them. If not, how do you feel about that?
You just keep asking random questions until you feel that you know your character.
