I'm thinking of a couple of series by Dave Duncan:
Magic Casement -- first in a series called A Man of His Word.
The Reluctant Swordsman: the first in The Seventh Sword series
It has been so long since I've read them that I'm conflating the two, but one or both would have requisite monsters. There are many editions (paperback) so the cover varies.
