They just help the reader understand Victor Frankenstien's fascination with anatomy, and his lack of empathy for living things.
The sections you might want to skip are (in the first edition) pages 78-80: This is the only really graphic animal-abuse scene.
and page 243: this one is not really graphic but could still be upsetting.
