I have a character and I was wondering if it's okay to write that his sexuality is "Unknown?" I was wondering because when I created him, his sexuality escaped my mind, and I don't know what to do now.

If you never figure out what, exactly, his sexuality is, that’s fine. Some people can’t find the words to accurately describe themselves, some people don’t identify with the label closest to how they feel, and some people just plain don’t care enough to figure it out. For a lot of people, their sexuality is a shrug, a hand wiggle, a non-commital grunt, or just one big question mark, and it’s perfectly okay to have characters that are the same way.
