Laurel’s Simple Samosa Pot Pie

Hello All, Happy Long weekend! I’m keeping this post short and sweet. I have to put the finishing touches on a short story about VIKINGS! Anyway, this week has been filled with a lot of crazy awesomeness. The final installment for the Golden Pack Alphas series, Midnight Born,  is finally out there and doing well (THANK YOU ALL!) and as I began to settle onto my couch tonight with a good read, I got several email requests from friends for a pot pie recipe that I make often when I throw dinner parties. The pie is not only delicious and simple to make it’s also vegan! There are certain recipes that I never seem to write down, so they stay stored in my brain until someone badgers me into sharing.
