Since everyone else is doing this; as others have said, most episodes are worth seeing, but here are my absolute faves–

The Shark Affair – probably my favorite episode of all time, Napoleon and Illya are on two separate missions that converge and pit them against a modern-day pirate.The Project Strigas Affair – you’ll be playing the “Hey, it’s that guy!” game all though this ep.
