By popular demand, here is the recipe for one of my favorite cakes. When I think fall, I think of Oatmeal Cake.
In a separate bowl, combine 1 1/2 cups of hot water and 1 cup of oatmeal. Set aside.
In a mixing bowl, cream: 1/2 cup of butter, 1 cup of brown sugar and 1 cup of granulated sugar.
Add 3 eggs. Mix.
Add 1 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon and 1 teaspoon of vanilla.
Add oat mixture.
Pour into 9x13 greased cake pan. Bake at 350 degrees 30 to 35 minutes.
Frosting:
Combine 1/2 cup butter, 1 1/2 cups brown sugars, 4 Tablespoons evaporated milk. Boil 1 minute.
Add 1 cup coconut, 1 cup oatmeal, 1 cup nuts (I used pecans) (If you don't like one of these ingredients, leave it out. The frosting will still be delicious)
While the cake is still warm, frost and stick back into the oven for a few minutes.
You can eat it either warm or wait until it cools. It is delicious and keeps well.
