Oatmeal Cake, It's My Fall Go To Recipe

By popular demand, here is the recipe for one of my favorite cakes. When I think fall, I think of Oatmeal Cake.

In a separate bowl, combine 1 1/2 cups of hot water and 1 cup of oatmeal. Set aside.

In a mixing bowl, cream: 1/2 cup of butter, 1 cup of brown sugar and 1 cup of granulated sugar.
Add 3 eggs. Mix.

Add 1 1/2 cups flour, 1 teaspoon baking soda, 1/2 teaspoon salt, 1 teaspoon cinnamon and 1 teaspoon of vanilla.

Add oat mixture.

Pour into 9x13 greased cake pan. Bake at 350 degrees 30 to 35 minutes.

Frosting:

Combine 1/2 cup butter, 1 1/2 cups brown sugars, 4 Tablespoons evaporated milk. Boil 1 minute.
Add 1 cup coconut, 1 cup oatmeal, 1 cup nuts (I used pecans) (If you don't like one of these ingredients, leave it out. The frosting will still be delicious)

While the cake is still warm, frost and stick back into the oven for a few minutes.

You can eat it either warm or wait until it cools. It is delicious and keeps well.

Enjoy! And think of me, still on low carb. :)

Biggus Low carb? How could this possibly be anything but STRATOSPHERIC carb? Just curious :)

Unsolved ☕︎ Mystery I wish I had some of that right now. Yummy!

Does this taste anything like Little Debbie's Oatmeal creme pies? I love those. =)

And if it has oatmeal in it, that is healthy.....right?? Lol

Biggus Wrong, oatmeal is anything but healthy. After all, millions of diabetics can't be wrong :( We won't even go into the sugar. If you don't want Alzheimers, diabetes, assorted metabolic disorders, IBS, Parkinsons, and many others, pass on this one. Eat the cream, butter and eggs instead in an omelette. Muuuuuuuuuuch better :)

B.J. Daniels This cake is wonderful, but Biggus is right. It is dessert. Definitely nothing healthy about it. :) But it is so darnedf good.
Thanks Ana.
Unsolved mystery: it takes like something wonderful, better than Little Debbie's :)
