As a nutritionist, I talk to a lot of people who want to weigh something different than they do. Sometimes they want to weight more, but usually they want to weight less. Quit a bit less.
Have you ever noticed that when you want something in a big way, a bit of desperation sets in? You’ll do anything to make your desire happen… even things that aren’t good for your well-being. I can’t stop any one of you from trying to lose weight with water and lemon juice, or eating nothing but grapefruit and bacon for a week, or over-exercising until you hurt yourself. But I can offer you this: Everyone can lose weight in a healthy way. It may not happen as fast as you want it to (and if that’s the case, please don’t go blaming your hardworking body for not stepping in time to your ego). And it may not be able to get down to a size 2 if your genetics say your body type is muscular and curvy. But everyone can experience a healthy-for-them weight. It takes just one thing: Good care.

I’ll be talking more about this in the weeks to come. But right now, I want to share a deeply nourishing, protein-packed recipe that I give my clients. A version of this is also in my upcoming coconut book, to be published by Sterling Publishers this fall.
Chickpea Coconut Salad
Servings: 4
Rich in vitamins A, C, E, as well as minerals, lauric acid and heart-healing medium-chain fatty acids, this protein-packed recipe is delightful: It’s easy, keeps well and is a great addition to any brown bag lunch. Because of the fiber, you’ll feel full after eating—a good thing if you’re someone who needs a lot of food to feel satisfied.
1 tablespoon lemon juice
1 tablespoon liquid coconut oil
1/2 teaspoon salt
1 (15 ounce) can chickpeas, rinsed and drained
1/3 cup freshly grated or unsweetened shredded coconut
¼ cup chopped celery
¼ cup chopped red or orange peppers
¼ cup chopped raw or cooked veggie of your choice
3 chopped scallions
1 teaspoon chopped green chile peppers
1/3 cup chopped fresh cilantro
In a large bowl, whisk together lemon juice, coconut oil and salt.
Gently fold in remaining ingredients, stirring until well-coated.
Allow salad to sit for an hour so flavors combine.
Serve as-is or over a bed of your favorite salad greens.

Chia For Everyone!
CHIA FOR EVERYONE!
Chia is one of my favorite superfood! While working on The Chia Book (Sterling Publishing), I fell head-over-heels in love with this nutrient-dense seed, learning how to use it with myself, my family, and my clients to help improve joint health, create long-term energy quickly, help lose weight, lower cholesterol, help digestive upsets and improve the immune system.
For those of you who are experiencing listlessness, fatigue, lack of motivation, and just a general case of the blah’s, chia can help. It’s outrageously high omega 3 fatty acid content to help brain function, improve mood, and sharpen mental acuity and focus.
With 20 percent protein and high amounts of strontium, it also gives an easy, steady supply of energy (this is how the Aztecs used it: as a quick energy food for warriors and message-carriers) that works as well for day-to-day use as it is for endurance athletes.
To experience the benefits of chia, may I suggest something sweet and yummy? Something puddingy? It’s called Chia Pudding and it makes a lovely afternoon snack. It’s also a great way to start the day: My kids sometimes have this for breakfast with a green drink.
CHIA PUDDING
Makes 2 servings
2/3 cup chia seeds
2 cups unsweetened coconut milk, almond milk or rice milk or other milk
1/2 teaspoon pure vanilla extract
Optional: 1 to 3 teaspoons honey, maple syrup, coconut sugar or other natural sweetener
Optional 2 tablespoons currants or chopped dried figs or dates or fresh fruit or diced cooked sweet potato
Optional: 2 tablespoons unsweetened coconut flakes
Put chia seeds, milk and vanilla in a 1-quart glass jar with a lid. Tighten the lid and shake well to thoroughly combine. Or, stir together seeds, milk, vanilla and optional ingredients in a bowl.
Allow to thicken for 30 minutes or more. (Or even better: Make it in the evening and let it sit, covered, overnight in the fridge.)
Adjust liquid if necessary. Spoon into bowls and top with fruit and coconut.

FOR YOU! A POST-PASSOVER DETOX OPTION
I love having options! Having things “my way” makes me so happy! So when a few people asked me if I’d run a post-Passover 5-Day Detox Party, I was excited!Supporting people and their health a week after this important food-and-drink-heavy holiday is a great idea! If you’re interested in registering or simply learning more, go here . It is the same program as our 5-Day Detox Party but it’ll take place the week of April 21 through 25, 2014. I’m calling it the 5-Day Post-Passover Detox!

THE SMELLIEST OF SPRING’S DETOXIFYING VEGGIES
Spring is a natural time of detoxification. Of rebirth and renewal. Mother nature uses this time to give us bitter, pungeant, incredibly detoxifying veggies. Think aspargus, nettles, fiddlehead ferns, and ramps, a powerful-smelling wild leek that is outrageously cleansing.If you’ve ever walked through a farmer’s market during the spring, you’ve probably smelled ramps. These grassy-topped members of the onion family are so robust-smelling (and tasting) that you can easily smell them yards away. But with their strong presence comes generous quantities of a number of potent antioxidants. In fact, ramps are such nutritional rockstars that it is worth eating them a couple times a week through the spring. Your health will thank you.
But back to the nutrients: The sulfur compounds in ramps can help lower blood pressure and inhibit tumor growth. Polyphenols and flavonoids reduce inflammation by preventing the oxidation of fatty acids in the body while also acting as a natural antihistamine (great for you allergy sufferers!) and toxin remover. Ramps are also rich source of the trace mineral selenium, which studies have shown to reduce one’s risk of cancer.
So how to use this bold veggie? I like to take a bunch and chop the bulb and part of the stalk (up until the green leaf blades) and toss the veggie into stir-fries, sautes and veggie soups—basically anywhere I’d use onions, leeks, garlic or scallions. To grill whole ramps (delicious!), trim off the leafiest ends, brush the length of the veggie with extra virgin olive oil, and place directly on the grill, turning after about two or three minutes. Or, enjoy ramps in this easy, detoxifying soup!
SPRING TONIC SOUP
Makes 4 servings
2 tablespoons extra virgin olive oil
1 pound ramps
1/2 sweet onion such as Vidalia or Walla Walla, thinly sliced
3 garlic cloves, chopped
1/4 teaspoon white or black pepper
1/2 teaspoon salt
3 1/2 cups vegetable or chicken broth
Salt to taste
Optional: Squeeze of lemon juice
Optional Garnish: chopped pine nuts or walnuts
1.Trim roots from ramps. Then trim away top 2 inches of greens from ramps.
2.Coarsely chop ramp greens and set aside.
3.Thinly slice ramp bulbs and white/pink part of the stalk and set aside.
4.In large saucepan over medium heat, add oil, sliced ramp bulbs, onion, garlic, pepper and 1/2 teaspoon salt. Stir occasionally, until vegetables are softened, about 10 minutes.
5.Add broth and simmer, partially covered, stirring occasionally, until onions, ramps and garlic are very soft, 20 minutes. Stir in ramp greens and boil 1 minute.
6.Working in batches, purée soup in a blender until very silky smooth, about 1 minute per batch (use caution when blending hot liquids. Strain out any solid material.
7.Return to pot, adjust salt and add optional squeeze of lemon juice.
8.Serve garnished with chopped pine nuts or walnuts.

Most of us have been carb fiends at one point or another in our lives. And some of us have never NOT craved carbs. Carbs—short for carbohydrates—are macronutients that our body uses for fuel. The problem comes when we begin to crave simple carbs (think white flour foods, such as cookie, bread, pasta, etc.) in excess. Let’s face it, carbs can be incredibly addictive, making it difficult for people to stop at one cookie or a half-cup serving of pasta.So how do you break your carb addiction? There actually are several ways, but one of the easiest in my experience is with a short, gentle detox. One that is whole food AND drink-based that is heavy on the nutrition education, so you know exactly why you are craving something, what to do about the craving, and how (and even why) to prevent it in the future.
