There’s something about a hot sandwich that just feels more satisfying sometimes especially when you add protein like I did in this Grilled Chicken Panini. With the grilled chicken, this sandwich has 26 grams of protein! I usually use sour dough bread because it contains higher levels of vitamins, minerals, and antioxidants than many other breads. I served this for dinner with some tomato soup, which was so delicious. Some other panini recipes you might want to try are this Eggplant Panini with Pesto, Asparagus Prosciutto Panini with Garlic Mayo, and Chicken Arugula Provolone Panini with Chipotle.

I grew up eating plantains every way you can imagine! Depending on the ripeness of the plantain, you’ll get different results. Mom makes them on the grill or fries them but I love making them in the air fryer! For sweet maduros, the best plantains are the ones that have black skins and tender flesh. The darker the skin, the sweeter they are, which is exactly what you want. Make these Air Fryer Maduros along with my Picadillo, Carne Bistec, or any Latin dish you like. I can’t believe it is almost Labor Day, that means summer is almost over. Bittersweet, because I love fall too lol! Three-Cheese Zucchini Quiche
This delicious Three-Cheese Zucchini Quiche, made lighter without heavy cream, is perfect for end-of-summer zucchini for breakfast, brunch or lunch.

Trying to adapt quiche to make it healthier is challenging because you can’t skimp on the pie crust (which is the best part, in my humble opinion. Aside from the buttery crust, quiche is also typically made with a good amount of heavy cream and cheese. I tested this Three-Cheese Zucchini Quiche a couple of times, and I think you’ll love how it turned out! I have many more healthy quiche recipes on my blog. Some others you might like with crust are my Spinach Ricotta Quiche, Chicken Quiche, or for crustless quiche recipes try Crustless Ham and Cheese Quiche or Broccoli Cheddar Quiche.

Zucchini Bread
This moist and delicious Zucchini Bread with walnuts, cinnamon, and vanilla, is made lighter with applesauce and is a great way to use up that summer zucchini.

I modified my Chocolate Chip Zucchini Bread to make this non-chocolate quick bread with lots of cinnamon, walnuts, and vanilla. I love how this came out!! It’s not overly sweet – just enough to be perfect for enjoying with your morning coffee. Some more of my favorite healthy zucchini recipes are this Chocolate Zucchini Bread, Banana Zucchini Cake, and Pineapple Zucchini Cupcakes.

I’m trying to hang on to every drop left of summer there is!
