Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Cheesy Baked Penne with Roasted Veggies
Penne baked with cheese, sauce and loaded with healthy vegetables in every bite. Roasted zucchini, red bell peppers, asparagus, red onion and fennel are tossed with balsamic and herbs then roasted for the best tasting meatless baked pasta dish EVER!

Sheet Pan Teriyaki Salmon and Vegetables
This easy, delicious (I seriously devoured this, it was THAT good) teriyaki salmon meal is made all on one sheet pan and ready in 20 minutes! You can easily double this recipe to serve four.
I’m a huge fan of sheet pan meals, a huge kitchen time saver! I like to line the sheets with foil or parchment for easy clean-up, completely optional. Here I marinated the fish, then cooked it down on the stove to create a glaze over the fish (I highly recommend this) but if you wish to skip this step, it will still taste fine.

Baked Ziti with Spinach
Baked ziti is a favorite comfort dish in my home! Adding spinach is a quick and easy way to get more leafy greens into your family’s diet without complaints. A great dish for Meatless Mondays, or any day of the week. We eat it with a garden salad, the portions and generous and satisfying.
I’m reviving this from the archives to update the photos. This makes enough for eight, so if you have a small family, you’ll probably have leftovers for lunch or freeze the rest for convenient freezer meals. This can be assembled a day ahead and kept refrigerated, let it sit at room temperature 30 minutes before baking.

Skinnytaste Dinner Plan (Week 53). So this week I taped a spot for News12LI, what a great experience! For those in the area it airs in two weeks on Tuesday morning. As you get ready for Christmas parties and cookie swaps check these out…Gingerbread Christmas Trees, White Chocolate Oatmeal Lace Coookies, and for a traditional “no meat” Christmas Eve that some celebrate, Quick Mussels Fra Diavolo.

Stuffed Baked Pork Chops with Prosciutto and Mozzarella
These stuffed pork chops are SO good, inspired my a meal I had at a local Italian restaurant stuffed with prosciutto, mozzarella and baby spinach then topped with garlic and breadcrumbs.

Slow Cooker Moroccan Chicken & Olive Tagine
Chicken, prunes, olives, carrots, onions, garlic and ginger are slow-cooked with Moroccan spices to create a flavorful and fragrant dish that you’ll want to make again and again. Serve it over whole-wheat couscous (or cauliflower rice for a low-carb option) with lemon wedges, fresh cilantro, or some chopped pistachios or almonds for a complete meal.
