Skinnytaste Dinner Plan (Week 54)

Skinnytaste Dinner Plan (Week 54)

Skinnytaste Dinner Plan (Week 54).  The final countdown is almost here! Are you ready? This entire week I’m giving away some fabulous gifts for a 7 Days of Giving giveaway PLUS the Skinnytaste Fast and Slow Cookbook with each prize. The winner will get TWO, one for you and one for your loved one! So far Day 1 we have Delallo Best of Italy Collection, it’s not too late to enter, Day 2 the awesome prize is a Nespresso Vertuoline, link here. Stay tuned all week on Facebook and Instagram to see the new prizes!

Pictured below is The Skinnytaste Meal Planner where I plan my dinners for the week (you can of course use any meal planner). Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. If you would like to see some of the previous week’s dinner plans, click here

Sheet Pan Teriyaki Salmon and Vegetables

This easy, delicious teriyaki salmon meal is SO good, made all on one sheet pan and ready in 20 minutes!

This easy, delicious (I seriously devoured this, it was THAT good) teriyaki salmon meal is made all on one sheet pan and ready in 20 minutes! You can easily double this recipe to serve four.

I’m a huge fan of sheet pan meals, a huge kitchen time saver! I like to line the sheets with foil or parchment for easy clean-up, completely optional. Here I marinated the fish, then cooked it down on the stove to create a glaze over the fish (I highly recommend this) but if you wish to skip this step, it will still taste fine.

Baked Ziti with Spinach

Baked ziti is a favorite comfort dish in my home! Adding spinach is a quick and easy way to get more leafy greens into your family's diet without complaints.

Baked ziti is a favorite comfort dish in my home! Adding spinach is a quick and easy way to get more leafy greens into your family’s diet without complaints. A great dish for Meatless Mondays, or any day of the week.  We eat it with a garden salad, the portions and generous and satisfying.

I’m reviving this from the archives to update the photos. This makes enough for eight, so if you have a small family, you’ll probably have leftovers for lunch or freeze the rest for convenient freezer meals.  This can be assembled a day ahead and kept refrigerated, let it sit at room temperature 30 minutes before baking.

Skinnytaste Dinner Plan (Week 53)

Skinnytaste Dinner Plan (Week 53)

Skinnytaste Dinner Plan (Week 53). So this week I taped a spot for News12LI, what a great experience! For those in the area it airs in two weeks on Tuesday morning. As you get ready for Christmas parties and cookie swaps check these out…Gingerbread Christmas Trees, White Chocolate Oatmeal Lace Coookies, and for a traditional “no meat” Christmas Eve that some celebrate, Quick Mussels Fra Diavolo.

This week’s meal plan features some easy meals that also make great leftovers for lunch. Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. Slow Cooker Moroccan Chicken & Olive Tagine

Chicken, prunes, olives, carrots, onions, garlic and ginger are slow-cooked with Moroccan spices to create a flavorful and fragrant dish that you’ll want to make again and again. Serve it over whole-wheat couscous (or cauliflower rice for a low-carb option) with lemon wedges, fresh cilantro, or some chopped pistachios or almonds for a complete meal.
