Pumpkin Mac and Cheese with Roasted Veggies
It’s October, so Pumpkin Mac and Cheese with Roasted Cauliflower and Brussels Sprouts is a must for the Fall! Using pumpkin puree makes a creamy light cheese sauce, without having to add too much cheese or butter. You can make your own pumpkin puree or use organic canned pumpkin to make it faster!

Skinnytaste Dinner Plan (Week 95)
Skinnytaste Dinner Plan (Week 95). I celebrated my birthday this weekend and went out to eat with friends and family so I am happy to get back on track this week! I’m keeping the carbs low this month (80/20) but craving Broccoli Cheese and Potato Soup so I added that to the menu (kids love it!).
Meal planning is a great way to get organized before heading to the supermarket to get ready for the week! My breakfast is usually something quick like eggs with fruit, a smoothie or avocado toast. We’re a family of four, so if a recipe serves more, it’s either packed up for everyone’s lunch or eaten the next day as leftovers. Tuesday: Grilled Steak Lettuce Tacos with Mexican Cauliflower “Rice”
Wednesday: Italian Pulled Pork Ragu (Instant Pot, Slow Cooker, Stove) over zoodles for me, pasta for Tommy
Thursday: Leftovers
Friday: Filipino Adobo Chicken with cauliflower rice for me
Saturday: Dinner Out
Sunday: Skillet Chicken Cordon Bleu with roasted asparagus

Pork Chops with Dijon Herb Sauce
These Pork Chops with Dijon Herb Sauce are delicious!! One of the best ways to prepare pork chops in my opinion. So juicy and full of flavor!

Chicken Marsala Meatballs
These Chicken Marsala Meatballs are a fun twist in the classic dish! Great served over butternut squash or egg noodles.
I recently went to my local Italian specialty store and saw these behind the glass case, and new I had to make them! Tommy’s not a fan of mushrooms so I wasn’t sure what he would think be he loved them! I sliced the mushrooms very thin which I highly recommend rather than buying them pre-sliced. They melt in you mouth!

Instant Pot Chicken Cacciatore
Chicken Cacciatore made in an Instant! The sauce is hearty and chunky, loaded with chicken, tomatoes, peppers and onions ( sometimes I add mushrooms too!) Great over pasta, squashta, rice or polenta. I also have a slow cooker version and stove top version too.

Skinnytaste Dinner Plan (Week 94). Happy October! I love October, the leaves start changing colors, there’s a chill in the air and I get to wear my cozy sweaters. I’m setting some goals and intentions for the new month. I’m trying to be good about remember to take my probiotics (great for gut health) and I’ve been working out consistently this past week and plan on continuing this habit (great for the body and mind).

Our Weekend in The Thousand Islands and Adirondacks, NY
Lighthouses, castles, boating, farms and more – here’s a recap (and a video!) from an incredible 4-day weekend in The Thousand Islands and Lake Placid, NY! We crammed a lot in this short weekend and had such an amazing time, we plan on returning really soon, hopefully in the winter when everything is covered in a blanket of snow.

Parmesan Crusted Delicata Squash
Roasted Delicata squash topped with a Parmesan-herb crust, I like to leave it in the oven until the edges are crisp, golden and delicious! Acorn squash can be used in place of Delicata.

Skinnytaste Dinner Plan (Week 93). Welcome Fall! Although here in NY, it still feels like summer. I’ve added some favorites this week, which includes Chicken Cacciatore which you can serve over pasta or spaghetti squash, Turkey Taco Spaghetti Squash Boats a low-carb alternative to tacos! And the Maple Soy Glazed Salmon which I like to roast with Brussels sprouts, SO good!
