A Week In The Life, Vol 15.
I can’t believe we are 15 weeks into the year!
We had another packed week. We did so much!
Jordy had a little trip to the children’s museum.
He loves it.
I can’t handle him!

These two went to a cat cafe and were obsessed. They both ADORE animals. Like adore.
We also went to the science center!
It was super fun.
They were super cute.
Another outfit choice.

I live for grilling season.
Actually, grilling season for us is all year – no matter the weather. But there is just SOMETHING about when spring and summer hit, the first days of warm weather, that get me super excited for grilling. I have so many incredible recipes, ranging from our favorite side dishes, sandwiches, salads, pizzas, and even breads to throw on the grill. The flavor can’t be beat, the clean up is minimal, you get to enjoy the weather outside and everything just tastes better on the grill!

Chilled Asparagus Crunch Salad.
This cold asparagus crunch salad is filled with so much flavor and texture, including toasted walnuts, creamy blue cheese and a tangy dijon dressing. It’s a fantastic spring side dish!
This is how you get everyone to love asparagus.
This asparagus crunch salad is made with tender asparagus spears, a tangy lemony dressing, crumbled blue cheese and toasted walnuts. It is so satisfying and most of all – textured! Lots of crispy crunchy and flavor.
Just what we all love.
Spring is my least favorite season, but asparagus makes it better!
I just recently shared an asparagus salad with you and it included brioche croutons and all sorts of good stuff. This is similar, but simpler. It’s a bit more classic and traditional. It doesn’t have as many things on top!
Let’s just say that.
And if you need an easy side dish for Easter, this is it.
And it’s so good because this can be considered your side OR your salad. Or both, of course. Which is even easier!
My fresh green bean salad is a dish I make on repeat in the summer months. When I tell you that I sometimes make three or four times a week, that is not an exaggeration. The tangy dressing paired with the crunch of the nuts and the creamy cheese – it’s perfect.
And it’s so good because this can be considered your side OR your salad. Or both, of course.

Tuesday Things.
1. When it comes to ice cream, Eddie prefers to get soft serve but then puts it in the freezer so it hardens. I am adamant that this ruins it. Defeats the purpose! Thoughts?
2. This homemade pistachio syrup is blowing my mind. Making it today.
3. Nothing on earth sounds worse to me than sleeping with socks on.
4. The way the tajin crunchy peanuts have a hold on me… the tanginess of tajin. It’s brilliant.
5. TV things!! The White Lotus!! Whaaaat. I also watched the Karen Read documentary on HBO and started Pulse! Also, the 1923 finale absolutely gutted me.
6. Food trends of 2025.
7. I want to learn how to make soup dumplings! They are one of our favorite things to eat.
8. The biggest your dream, the better version you become! Gives me encouragement because I’m a crazy wacky dreamer. I don’t really think anything is impossible!

Crispy Fish Tacos with Mango Slaw.
These beer battered fish tacos are crispy, light and delicious. Served on warm tortillas with refreshing mango slaw, they are drizzled with chipotle crema. Light, delicious, satisfying and easy to make!
And chipotle crema!
These beer battered fish tacos are the ultimate dream: light and airy crunchy exterior with a buttery, flaky interior of white fish. A refreshing mango slaw, a little heat from a chipotle crema drizzle and maybe some guac on the side.
This truly is one of my dream meals.
I love a beer battered fish because it’s so light and crisp! Even though we’re frying the fish, it’s still so airy and crunchy. Plus, the fish is super flaky to begin with.
My preference is to use a white fish – usually cod – because it’s pretty easy to find.
But!
There is nothing I hate more than deep frying or filling a pan with oil and making my entire house smell like bar food. But!
Beer batter is super light and airy and it doesn’t necessarily have to be deep fried. I use just a swirl of olive oil in the pan so it covers the bottom. As long as your pieces of fish are fairly thin, they fry up so nicely in the pan. A little shallow fry, if you will.
That makes it SO much easier. And the fish cooks super quickly, so these are done in a flash.
When I make fish like this, I prepare the other ingredients ahead of time.
I make a quick slaw, which is just thinly sliced green cabbage, thinly sliced mango and lots of cilantro. Toss it with lime juice and a touch of olive oil, some salt and pepper. This is so crunchy and crisp and adds such a refreshing pop against the warm fish.
Sometimes we eat the fish with the slaw on top, alone! No tortilla in sight.
I also make the chipotle crema ahead of time too. Not only will letting it sit marry the flavors even more, but it’s easy and really to go for the fish as soon as it’s done cooking.
I even char my tortillas ahead of time too! I would suggest sticking them in a low oven to keep them warm. The only way I char them is either on the grill or over my gas burners. Super fancy!
To make the fish, I season it super well. The batter is just flour, an egg, spices and beer (or even club soda, if you want to skip the alcohol). The fish gets dipped in the batter, fried in some avocado oil and it’s done!
Assembly is simple:
Tortilla > slaw > fish > cremaOh and guac, if you wish! Or even just slices of avocado. (more…)

A Week In The Life, Vol 14.
Another week!!
We had a packed one.
Jersey for school even though the Pirates… whomp whomp.
Rainy day scoot.
Talking to the geese too.
Calling them, haha.
Can’t stop eating the caprese toast from my new book!
Blooms making me so happy.
My mom and I saw Peter Pan this week!
First, we had this tempura vegetable tower that was unreal.
Went out to dinner with cousins!!
They had a blast.
He’s basically an adult!
Baby Sebby!
Then it was time for Emilia’s play!!
Her costume was hilarious… they did Sing and she played Eddie Noodleman.
She was sooo cute and funny. Basically the comedic relief!
I love how much she loves it.
Jordan kept saying “Emilia is so sweet!”
A little hockey!
Emilia had two shows, and while we were at the second, Eddie and Jordan tagged along to a birthday party with Max.
Boys night!
