60 Recipes For Memorial Day Weekend!
These are all my favorite memorial day weekend recipes! There are snacks, cocktails, salads, pastas, burgers, hot dogs and more – everything to make the unofficial kick off of summer super delicious!
I have so many delicious memorial day weekend recipes for you!
I know we’re still a week and a half out, but I could NOT be more excited for the kick off to summer this year. MDW is one of my favorite weekends of the entire year and right now I’m feeling so much more hopeful and great about this season to come! Today I have a ton of my favorite recipes for Memorial Day weekend for you – not just burgers and hot dogs, but amazing salads, snacks, appetizers and dips, side dishes, grilled meals, cocktails and treats. It can’t get any better than this!
For a million years we have always gone to a Memorial Day parade on Monday then walked through the cemetery – it’s a tradition. The days before, we do tons in preparation for summer and just have a lovely little weekend. I love it!

Lettuce Wrap Blue CheeseBurgers with Caramelized Onions.
These lettuce wrap burgers are my new favorite burger! Melty blue cheese burgers topped with tons of caramelized onions, a drizzle of creamy honey mustard all wrapped in a lettuce cup. Refreshing, satisfying and crisp!
Let me tell you how I’m officially OLD.
I love these lettuce wrap burgers.
Like, LOVE THEM. Blue cheese burgers piled high with caramelized onions, drizzled with creamy honey mustard and served in lettuce wraps. Freaking delicious.
I just adore them!
A few years ago, you couldn’t have paid me to eat a burger wrapped in lettuce.
And trust me, this is nothing about cutting out the bun or the bread. Has nothing to do with that. It’s all about the CRISP LETTUCE.
Refreshing, crisp iceberg lettuce that we all usually treat like garbage. You know? We say it tastes like stale water and is worthless in a salad.
But as a wrap? TOP NOTCH. It is supreme.
Sure, we kind of already know this from lettuce wrap – the famous ones with the sesame chicken and all that.
But lettuce wrap burgers are the one way I have always avoided using the lettuce… thinking it would be too messy, not sturdy enough and just not as… good? Sort of like a give me brioche or give me death situation. Nothing can beat the brioche bun.
However, it was definitely my cheeseburger salads that started to change my mind a few years ago. Something about the crisp lettuce is part of that classic cheeseburger flavor – mixed with the cheddar and the ketchup and the mustard and oh! It’s fabulous.
So I started making cheeseburger lettuce wraps. Dreamy. And so easy. The lettuce wraps add this cooling, refreshing bite on a hot summer day.
They are topped with blue cheese which gets extra melty.
Caramelized onions, which we know make every burger better.
And a drizzle of creamy homemade honey mustard!
All wrapped up in that cold iceberg lettuce leaf. Juicy as heck, melty with cheese, so flavorful I could scream. (more…)

Tuesday Things.
1. I think we are eating two cantaloupes and two watermelons every week, at least. Whole family is obsessed.
2. All I want to make are these shiny crinkly brownies!
3. We’re having family reason time every morning as soon as school ends and I am so excited about it. 30 minutes every day… and I can’t wait.
4. Speaking of, I’m reading Carley Fortune’s newest and loving it! What are you reading? My summer reading list drops in less than two weeks!
5. I totally forgot about Target food courts!
6. TV things!! The end of Your Friends and Neighbors… ahhh! I also watched Nonnas (so cute) and the Deadly American Marriage on netflix.
7. What interior designers really think of Nancy Meyers!
8. I ask this like twice a year – what are your current favorite podcasts?! Esp true crime. Ha.
9. The melamine lazy susan above is something I use almost every single day. Major fave! I even take it on vacation now.

Broccoli Pesto Tortellini Salad.
This broccoli pesto tortellini salad is incredibly easy and so delicious! Homemade broccoli pesto made with arugula and parmesan blankets tender cheese tortellini. Lots of tomatoes and shaved parm come next! It’s beautiful, fresh and satisfying!

Today we’re making broccoli pesto tortellini and oh boy, I hope you love it. This broccoli pesto is made with arugula and it’s so bright and delicious! Add in some shaved parmesan, tomatoes and a hint of lemon and this tastes like sunshine is a bowl.
It’s so filling and pretty too!
Plus, I’m always looking for new summer side dish ideas.
If you have a copy of Everyday Dinners, then you might recognize this pesto recipe! It’s the broccoli pesto from that book and it’s one of our favorites.
You already know that we are a bunch of broccoli freaks, so making it into pesto is just natural.
In the book, I share a recipe with roasted broccoli. It is fab and roasted broccoli will forever be in my top favorites list.
But this one uses blanched broccoli – which is embarrassingly easy – allowing it to be bright green and beautiful! There’s also no bitterness, which can sometimes happen from broccoli that has been a little over-roasted.
I am very familiar with this because I like to roast the heck out of my vegetables. It’s my biggest downfall! Char them all please.
Oh, and the other thing.
We also love cheese tortellini. Who doesn’t?! It cooks in minutes, tastes amazing and is so satisfying. I love that it can work as a side or a main dish.
The good news is that you can use any variety of tortellini here, making it super customizable to your dinner. (more…)

Lemon Blueberry Cobbler Bars.
Lemon blueberry cobbler bars are a perfect spring treat! Shortbread crust is topped with a lemony blueberry filling that is gooey and dreamy. A cobbler shortbread sprinkle finishes them off. A lovely make-ahead dessert bar!
Weekend treat time!
These lemon blueberry cobbler bars are crumbly, chewy, gooey and filled with incredible lemony berry flavor. They taste like a big bite of spring.
It’s almost like a lemon bar and blueberry cobbler had a baby. In the most wonderful fruity way possible.
If you’re looking for a dessert to make for mother’s day weekend or one to serve as the sunshine months come around, this is it!
It serves a crowd.
The flavors are so fresh and ideal for the season.
And they even freeze well too!
If you have a copy of The Pretty Dish, you might recognize this as one of the best recipes in the book! I have blueberry peach cobbler bars in that book and they are DIVINE. I have made so many variations on that recipe, from strawberry cobbler bars to apple ones to cranberry ones.
This is such a versatile recipe and one that everyone loves!
And the best part is that it’s a true make-ahead recipe. You prepare these ahead of time and take them to a party or serve them for dessert… you’re the most popular!
It’s all about shortbread. Another great thing about this recipe is that you make a shortbread mixture that works for the crust AND the crumbly cobbler topping! Super easy. Once it’s made, I press half of it into a baking dish and save the other half for the top.
The filling has tons of fresh blueberries, lemon zest, some sugar, eggs, cornstarch and vanilla. There’s a touch of half and half in there too.
Once mixed, I pour the filling right on the crust.
Next, I crumble the remaining shortbread mixture over that filling. Then I pop it into the oven!
These take about 45 minutes to bake and I like to cool them completely before slicing. Sometimes I even chill them in the fridge overnight!
The filling is so gooey and fruity and just a dream! But the crust is buttery and fabulous. The combination just WORKS. (more…)

Cooking at home is my favorite on a weekend like this – or at least enjoying food at home if someone else cooks!
