The Memory Keeper is here!

Over quarantine, I used every single minute of our shut-in writing, and I wrote two books at the same time. Those books were Christmas at Fireside Cabins (which is on sale at the moment for 99 c/99p—go get it!) and The Memory Keeper, my first book with my publishing imprint Harpeth Road Press. The Memory Keeper will be out in January, just after the Christmas rush when we’re all longing for one more book to take us away to our happy place!

Pumpkin Spice Latte (at home)

Let’s face it: there’s a LOT going on in our world right now. My mission this year is to create as many moments of happiness as I can, relax, and go with the flow. Speaking of flow, I have perfected the at-home pumpkin spice latte, so I thought I’d share the recipe with you!

As the cold weather rolls in, there’s nothing better than to cuddle up with my favorite book and sip on a warm, sweet cup of coffee. The average pumpkin spice latte tops out at around 380 calories, but with all the coffee I like to drink, I had to find a way to bring that number down. So I’ve created a recipe that will provide all the cheer for about 150 calories. Here’s how I do it, straight from my own kitchen:

Ingredients:

1 can pureed pumpkin

Vanilla almond milk

Strong Coffee - espresso style, so about a shot’s worth

Pumpkin spice creamer (cinnamon or vanilla both work too)

Pumpkin pie spice (UK folks, this is similar to your mixed spice)

Light whipped cream

Steps:

Brew espresso or very strong coffee and measure about a shot glass worth. Put it into your favorite mug.

On the stove or in the microwave, warm the vanilla almond milk until warm. (Microwaving, you may want to do 30 second intervals with stirring in between.)

Add the almond milk to the shot of coffee in your mug. You can get fancy and use a spoon to hold back the foam, spooning it in at the end. Go on, be fabulous and spoon it in.

Add one large spoonful of pureed pumpkin and stir.

Add two tablespoons of your creamer. Stir.

Top with light whipped cream.

Lightly sprinkle pumpkin pie spice on top.

It goes without saying that this cannot be enjoyed without a nice pair of fuzzy socks, a warm blanket, and a good book! If you need a book, head over to my books page. I can nearly guarantee I’ve got one for every pumpkin spice lover.

Christmas at Fireside Cabins is OUT NOW!

I'm so excited to announce that my latest festive read,  Christmas at Fireside Cabins , is out now!


For Lila Evans, Christmas is a tough reminder of losing her father. But this year, she’s organized a getaway with her friends. Fireside Cabins seems like the perfect setting, but it’s far from a winter wonderland. The cottage is falling apart, so Lila and her friends should leave, but Lila can’t bear to leave the tearful elderly woman who owns it.

Not Your Mama's Coffee

I don’t know about you, but I’ve cooked more in the last four months than I probably have in my life. In an effort to create normalcy during the quarantine, I’ve been very busy in the kitchen, making cakes, cupcakes, and dishes I’d have never imagined I’d ever cook or bake so that we could have memorable celebrations like birthdays and date nights. With things still unsettled in our world over the summer, we’ll have to get creative about how to spend our lazy days to give ourselves the much-needed break from daily happenings. So today, I’ve got something to get us going for all the coffee lovers. It’s the perfect cocktail for kicking back on the porch with that beach read you’ve been eyeing. I hope you enjoy it!

Not Your Mama’s Coffee You will need:

Instant Coffee

Raw Sugar

Almond Milk

Cream Liqueur

Caramel Sauce

In a bowl, add

3 tablespoons instant coffee

3 tablespoons raw sugar

2 tablespoons water

 

Mix with a blender until it’s the consistency of sticky marshmallow cream. (This takes a while, by the way, so if you have a hand mixer, put that thing on high and grab a partner to take turns.)

 

In a glass, fill 

2/3 with ice

1/3 of iced glass with vanilla almond milk (or milk of your choice)

1/3 of iced glass with your choice of cream liqueur (for nonalcoholic, add heavy cream); I used Tennessee Cream Whiskey.

 

Stir.

 

Spoon the coffee mixture on top and drizzle with caramel.
