My family have been “churro people" since our vacation to...




My family have been “churro people" since our vacation to Walt Disney World last year. My oldest begged to try a churro, and we all fell in love!
I better be making these for his birfday this year, huh?
Churros are already awesomely delicious, so wonderfully fried and sweet, but Jasmine of Chica Chocolatina took churros to a whole new level by coming up with a receipe for Churro Waffles.
But wait, Jasmine didn’t stop there. The response to her Churro Waffles was so great that she took her kitchen wizardry one mouthwatering step farther. She combined the crispy cinnamon and sugar-coated goodness that is a churro with the warm, fruity heaven that is apple pie by creating, you guessed it, Churro Apple Pie Waffles.
If Jasmine hadn’t shared so many photos, we’d think this was all too good to be true. But that’s not all, she also shared her brilliant recipes.

Everyone knows calories don't count on birthdays
Just got back from Huber’s where we picked our own peaches, raspberries (black & red), and blueberries. We then bought at least four pounds of everything else in the market. My fridge overfloweth! It all looks amazing & delicious.
I restrained myself to one piece of dirt cake last night. It was a generous piece and the pudding was so rich, really, it was easy to “stop."
Here’s the thing, though: if I’m doing Couch to 5k (which, I am), then really, isn’t that enough? I feel like I eat right most of the time. My grocery purchases reflect more fresh food and raw ingredients then processed, and I try to avoid fast food as much as possible. Yesterday I overdid it with the cookies while making the dirt cake, so, yeah, I felt guilty and felt icky from too much sugar. Today I’ve remedied that with a fridge full of fresh produce, and dinner tonight will be courtesy our grill.
I feel like that’s enough. Exercising every other day plus healthy eating should be enough.
I want to feel and look better. I want to lose weight. I feel like I will, if I keep exercising and keep crap food out of my house. I hope it’s enough.
If I don’t feel significantly better and haven’t lost any weight after a month, I’m calling my Dr.

So, today is a rest day and I don’t have to do the Couch to 5k thing. Thank merciful Jesus, because I am still so tired. It’s only week one and I only got through 20 min of the 30 min run, but I’m definitely feeling it today.
Did I mention I did it barefoot? I did. I can’t really tell you why, other than it felt right to me. Normally I wear shoes on the treadmill but knowing I was going to be running, I just opted to go without. It felt better.
This morning I watched Tim run for a bit while we talked about Quartet. I also stretched & thought about getting out my yoga ball. He did the whole 30 min while I moaned & groaned. I am a lot more out of shape than he is. I didn’t get ambitious enough to do the yoga ball, but I might try and do something like that next time.
Tomorrow is my day running again & I kind of dread it because there is little chance I’ll control my cravings for Sean’s birthday cake tonight!
BUT. But. But, I gotta start somewhere, so at least this is *somewhere*.

Ack!
I picked an awful day to start dieting. Tonight I have to shop for my 8 y.o.’s birthday party, and he wants dirt cake, Mac & Cheese pizza, and Hawaiian pizza.
I might forego the grocery and skip straight to CARB CITY, exit 1 mi ahead.
So maybe this diet thing goes one day at a time, huh?
I can’t see myself passing up a big piece of dirt cake, right? What was the point of that awesome home birth 8 years ago if I don’t get to commemorate it with whipped cream & cream cheese and Oreos?
I could skip the Mac & Cheese pizza, but you know I’ll have to sample it to make sure it turned out okay! He used to like to get that from CiCi’s, and now CiCi’s is closed, so I gotta try and find curly macaroni for him…because he is my BABY and BABIES get spoiled around here.
I’m tired. I had planned to write today while the kids watched the movie at the library, but our day got totally rearranged and now I’m pretty exhausted from cleaning house and stuff. MAYBE because I ran/walked this morning. Maybe not. I dunno. I just know I need a nap now.
