Banana Split Cake

Ingredients:


2 c graham cracker crumbs


1/2 c butter, melted


1 (80z) package cream cheese


1/4 c butter, softened


3 c confectioner’s sugar


4 bananas


1 (20 oz) can crushed pineapple, drained


1 qt strawberries, stemmed and quartered


1 1/2 c sugar-free strawberry glaze (doesn’t have to be sugar-free -_^)


1 (12 oz) container lite frozen whipped topping, thawed (also doesn’t have to be lite)


1 (10 oz) jar maraschino cherries, drained and quartered


 


Directions:



In a medium bowl, mix together the graham cracker crumbs and melted butter. Press into the bottom of a 9×13″ baking pan. Chill to set.
In a large bowl, mix together the cream cheese, butter and confectioner’s sugar until smooth and creamy. Spread over the chilled graham cracker crust. Arrange the sliced bananas over the cream cheese mixture. Then cover the drained, crushed pineapple. Place strawberries cut side down over the pineapple layer, then coat with strawberry glaze. Spread the whipped topping over the strawberry layer, decorate with maraschino cherries, and sprinkle with chopped nuts.
Refrigerate for at least 4hrs before serving.

 


This is a simple, yet extremely tasteful treat and perfect for this upcoming spring season. I hope you enjoy this as much as I did!

Author Interview with Nadia Bashoo

Nadia Bashoo is the writer of such books as The Hand of Destiny series, Sacrifice, and her newest, Wolfsong.


I have been lucky enough to get an interview with her for Wolfsong.

Q: So tell me, what inspired you to write Wolfsong?


It came about because of an image I had of a wounded wolf and a girl crouching beside him.


Q: Who are your favorite authors?


I have so many. I love Cassandra Clare, Phillip Pullman, J.K. Rowling and Rick Riordan to name a few.


Q: How long did it take to complete this novel? Were you satisfied with how it turned out?


It took a year to write the first draft, after which were several re-writes. I’m satisfied with how it turned out, but I’m not sure if I’ll write another paranormal romance. Certainly all my other ideas fall into the Fantasy/Adventure categories.


Q: What would you say your writing style is? Do you plan everything out? Do you write mainly on the computer or do you prefer to write long-hand like some other authors do?


I write on the computer. I’m blind and I use a speech software program to write with. I’m terrible at planning. I know how the book begins, ends, and some things in between, but generally I just go where the story takes me.


Q: Who was the first to read your book? What was their reaction?


My closest friend. She loved it, but she may have been a bit biased.


Q: Did you do any research for your story?


No, not for this one.


Q: What was the hardest part of your book to write?


My heroine’s reaction when she learned the truth about the boy she loves. It took ages to get it right.


Q: What do you want your readers to remember about your writing?


that it’s realistic.


Q: What is your worst habit?


checking my emails when I should be writing.


Q: What is the hardest part of writing, for you?


not having a comprehensive plan when I start.


Q: What do you wish you could do better?


I wish I could plan better.


Q: What do you consider your greatest accomplishment?


My Hand of Destiny series. They were the first books I ever wrote and the longest. Oh, and being recently compared to Phillip Pullman.


Q: How far are you on the sequel to this novel, if there is one?


Wolfsong is a stand-alone novel. I am now working on the first of what I hope to be a trilogy set in Camelot.

Holy Flaming Braziers!

I was just watching a preview for Spider-Man, you know, the old one with Kerstin Dunst and Tobey McGuire? Yeah, so I noticed she was not wearing a bra. She’s wearing a dress, in the middle of a cafe, with no bra. I don’t think I’ve ever seen her wear a bra in any movie I’ve seen her in. Keira Knightly has been caught committing the same faux pas.


There have been so many! What’s with all the boobs being left un-holstered? I could understand if you said it was for the sex appeal for the guys, but come on, they’re barely B-size. I’m not saying I want to see bigger boobs, however, trust me. I don’t care to see ANY boobige. I happened to serve this one woman with big boobs and of course, no bra. I assume you know I already hated this table, and every waiter in the building was fine with taking it over for me. Yeah… *rolls eyes*… Anyway, I felt so bad for this woman’s little boy because her freaking nipples were sticking so far out they could’ve poked out his and his dad’s eyes.


Is this a new fab? Are we going back to the “BURNING OF THE BRAS!” thing from the 70′s? Really? I can’t wait to see these girls showing off their knee-knockers ten to fifteen years from now.

The Cannoli

I love cannolis! I love love love them! Not only are they adorable, but they are absolutely adorably delicious!


What you’ll need:


2 cups   all-purpose flour                                        3/4   red wine


1 teaspoon   white sugar                                          1 1/2 quarts oil for deep frying


1 teaspoon   salt                                                          1 1/2 pounds ricotta cheese


1 1/2   teaspoons   ground cinnamon                 1/2 cup   sifted confectioner’s sugar


1/4   ground nutmeg                                                 2 teaspoons   vanilla extract


2 tablespoons   shortening                                     3/4 cup   miniature semisweet chocolate chips


1   egg white                                                                  3 tablespoons   chopped candied orange peel


 


Directions:


1) In a medium bowl, stir together the flour, sugar, salt, cinnamon and nutmeg. Blend in the shortening and egg white. Add the red wine one tablespoon at a time until the mixture forms a ball. Knead the dough enough to bring it together. Cover and let rest for half an hour.


2) Heat oil in deep-fryer to 375 degrees F (190 degrees C). Divide dough into 2 parts. On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into 4 inch long ovals. Place a cannoli tube onto the oval lengthwise and roll up with edges overlapping; seal with a dab of egg white.


3) Fry cannoli shells 2 or 3 at a time in the hot oil. When golden brown, remove from the oil to drain on paper towels. Remove tubes.


4) To make the filling: In a medium bowl, mix together the ricotta cheese and confectioner’s sugar. Fold in the vanilla, chocolate chips and candied orange peel. Chill for at least half an hour before filling shells. Drain off any excess liquid. Fill cooled shells and smooth off the filling at the edges. Keep refrigerated until serving.
