Southern Coleslaw #Recipe from #VinesofEntanglement
A personal favorite of people in my real world. Mine will be decidedly yellower than most coleslaw. It’s an Eastern NC thing.
In the Carolinas, we put mustard coleslaw out as a side dish, but also put it on bbq sandwiches and hot dogs.
Here’s my recipe���The measurements for mustard and mayo are approximate. I’m one of those add-till-it-looks-right Southern cooks.
1 small green cabbage
1 large carrot, peeled
4 tablespoons yellow mustard
1/4 cup mayo (Southerners prefer Duke’s or Hellmann’s)
2 tablespoons white vinegar
2 tablespoons sugar
2 teaspoons salt
1 teaspoon celery seeds
1. I used to grate and chop everything from scratch. Now . . . ain’t nobody got time for that. So I buy the pre-grated coleslaw mix at the grocery store.
Here’s what you do if you’re a purist or have a lot more time on your hands than I do���
Remove outer leaves from cabbage. Quarter cabbage and cut away the inner stalk. Chop cabbage using a knife, food processor or large grater. Place in a large mixing bowl. Grate carrot into the cabbage.
2. Mix remaining ingredients in a small bowl.
3. Let stand 15 minutes and stir again. Taste and add more sugar and salt if needed. Refrigerate. Best used within 2 days.

Launching out to Deeper Water from Coast Guard Courtship
My oldest daughter painted this in art class. This became the inspiration for Amelia’s fictional portrait of Max.
My theme for Coast Guard Courtship was Luke 15:4 where Jesus tells His disciples to ���Launch out into the deep and let down your nets for a catch.���
What does this verse mean to you in your current situation of life?
My prayer for all of us is that we might each experience the reality of Romans 15:13. ���May the God of hope fill you with all joy and peace as you trust in him, so that you may overflow with hope by the power of the Holy Spirit.���

Eastern Shore Oyster Stew #recipe from Coast Guard Courtship
Ingredients:
salt and pepper
2 cups milk
2 Tbsp butter
Directions:
1. In saucepan, melt butter and add milk.
2. Add oysters, salt and pepper (to taste).
3. Heat until almost boiling. Do not boil as milk will curdle. Watch for edges of oysters to curl.
4. Serve with oyster crackers or saltines.
Optional���can add fresh mushrooms���just cook separately and add.

My Grandmother’s Southern Mayo Biscuit #Recipe from #VinesofEntanglement
2 cups self-rising flour
1 cup milk
6 Tbsp. mayo of choice
(In the South, people prefer Duke’s or Hellmann’s)
Directions:
1. Preheat oven to 400 degrees.
2. Stir ingredients together and form dough ball.
3. Roll out dough and cut out with biscuit cutter. You can also forego cutting out and just make drop biscuits.
4. Bake on greased baking tray 12 minutes or till golden brown. Makes 1 dozen.
Easy as can be. Enjoy.

Southern Nights and Lightning Bugs
So many wonderful childhood memories involve late Southern nights catching fireflies in a glass jar that I had to include this magical Southern childhood experience for Ian Mabry in Vines of Entanglement.

Southern Forest Aglow
Fireflies are not native to every locale. They’re found mainly in temperate or tropical areas. I start looking for them in NC about the first week of June and lightning bugs for me are the true sign that summer has arrived.
And I wish for every child and grownup alike, the joy of lazy, sultry Southern evenings on the porch and much fun temporarily capturing these elusive creatures of light.

Eastern Shore Smith Island Cake #recipe from Coast Guard Courtship
This is my husband’s favorite dessert of all time���Enjoy.
Cake���
1 box cake mix
1 cup butter
4 eggs
2 cups milk
1 cup sugar
dash of salt
1 1/2 cups flour
Fudge Frosting���
2 squares semi-sweet chocolate
1/2 cup butter
1/2 cup milk
1 tsp vanilla
Directions:
1. In large mixing bowl, add cake mix, flour, salt and sugar. Stir and then cut butter into dry mixture.
2. Add eggs one at a time. Gradually add milk.
3. Put the amount of a large serving spoonful of mixture into each baking pan. Make 8 individual layers.
4. Bake at 350 degrees 10-12 minutes or until done.
5. Add all frosting ingredients to a saucepan. Melt chocolate squares and cook to a hard boil 3-5 minutes. Transfer to a mixing bowl and mix with electric beaters to thoroughly blend and thicken.
6. Allow cake and frosting to cool before spreading frosting between 8 layers and on cake.

Eastern Shore Crab Imperial #Recipe
Miss Jean’s Crab Imperial may be one of my favorite dishes on earth. Each Eastern Shore matron has her own special way of putting together this Eastern Shore treat. Here’s one version.
Enjoy.
2 Tbsp butter
2 Tbsp flour
3/4 cup milk
pinch of salt
1 Tbsp mayo
2 Tbsp lemon juice
1 tsp prepared mustard
1 tsp horseradish
1 green pepper, cut very fine (I omit this, ’cause I hate green peppers)
1 lb. crabmeat
1 tsp Old Bay seasoning
Directions:
1. Melt butter. Add flour and blend.
2. Stir in milk gradually and cook over low heat until mixture thickens.
3. Add salt, mayo, lemon juice, mustard, horseradish, green pepper, seasoning and crabmeat.
4.. Mix and place in greased casserole dish. Top with buttered bread crumbs or cracker crumbs. Bake at 350 degrees until brown.
