Here Comes a New Novel: A CAGED BIRD SINGS: A YOUNG MAN'S UNTOLD WAR CHRONICLES

UPDATE:  More than 50,000 Lake Tahoe residents have evacuated the invasion of the Caldor Fire. While so many people, pets, wildlife, and firefighters to the National Guard are coping with the horrific challenges of this disaster, including destruction, separation to loss of loved ones, anger, shock and grief--something ironically is in works--a forthcoming timeless novel,  A CAGED BIRD SINGS:  A YOUNG MAN'S UNTOLD WAR CHRONICLES created and written by author, musician Dr. James Channing Shaw and co-authored by me, Cal Orey, a non-fiction and fiction writer.

HONEY BOOK BACK TO PRESS AGAIN! AUGUST 24 -- 7,500 COPIES

Berry Crumble, A Classic Dessert to Chill During Stressful Times

At age twelve, I was an adventurous kid drawn to nature’s superfoods and the great outdoors... 

One cloudy afternoon, a girlfriend and I hiked into the Los Gatos foothills, where grass wasn’t manicured and horses ran free. Trespassing on pristine grounds and picking wild berries off plants was an exciting novelty until it began to pour down rain.  But once we were home the escapade hadn’t even started.

I took a hot shower and cleaned off the mud on my body. Later, at night, I scratched my cheek, arms, and legs because for some unknown reason they itched. By morning when I awoke, red bumps and blisters were visible from head to toe. “Poison oak,” my mother announced after I told her where I had gone the day before. By dinnertime my face was red and one of my puffy and painful eyelids was swollen shut. My two siblings chanted, “Cyclops,” insinuating I looked like the spooky one-eyed creature in mythology. I ran into my bedroom, onto the bed, and hid underneath the covers.

Later, my mom consoled me. She sat on the bed and said, “Ignore your brother and sister.” She handed be a bowl of homemade blueberry crumble. But the berries were store-bought. The comfort food dessert was warm as she told me a story about the Greeks and Romans. Evidently, they used wild berries for medicinal powers. I savored the berry treat, believing the bumps would heal in time. And they did.

Also, I learned crumbles were popular during WWII. Since I just finished co-authored a novel based during this era, it seems like a perfect time to make this easy treat today.  This recipe is inspired by my mom’s gift of baking and nurturing during the best and worst of times.

Strawberry Crumble

1 cup fresh blueberries, rinsed and chopped or sliced strawberries

1 tablespoon fresh lemon juice

½ cup white granulated sugar

¼ cup all-purpose flour

1 teaspoon ground cinnamon

Crumble Topping

¾ cup all-purpose flour

¼ cup European style butter, salted, melted

½ cup brown sugar

¼ cup oats (optional)

Granulated white sugar and cinnamon (to taste)

½ cup nuts, chopped (I used lightly salted cashews when crumble is baked)

½ cup plain Greek yogurt

Honey (to taste) (I used local honey to help fight seasonal allergies)

Basil or mint sprigs for garnish (optional)

In a bowl place berries. (Blot dry first.) Add juice, sugar, flour, and spice. Set aside. In another bowl combine flour, butter, sugar, and oats. Put fruit mix in ramekins. I filled two to the rim. Top fruit with crumble topping. Sprinkle with sugar mixture. Place in a shallow pan and fill with water a few inches the way you do with custard. Bake about 40 to 50 minutes. It’s done when topping is golden brown and fruit is tender and bubbly. Best served warm in the morning or night. Serves 2 to 4. It is best topped with plain Greek yogurt mixed with honey (to taste). Or use a dollop of whipped cream or vanilla gelato (if the weather warms up). Garnish with basil or mint.

So, is this yummy, nostalgic berry crumble as exciting as chasing wild horses and picking wild berries? Nah, probably not. But it is sweet and savory, not to forget blueberries are nutrient-dense. There is no need for you to forage berries in the wilderness. Just go to your favorite local supermarket and grab a container of blueberries. Then, whip up this recipe with its sweet and juicy berries from Mother Nature.

Welcome to sweet old-fashioned S'mores. These graham cracker sandwiches are traditionally toasted over a campfire. Or a marshmallow, held by a metal skewer, can be heated over a firepit until the white puff it is light brown. Then, you place the toasted marshmallow on a cracker with a square of Hershey’s Milk Chocolate Bars and top it with another cracker.

As history goes, S’mores graham cracker marshmallow chocolate sweet treats were a popular Girl Scout deal back in the Sixties. Often, they were made over a bonfire and included singing campfire songs and sharing spooky stories.

In the 21st century, on the South Shore of Tahoe, I was invited by a neighbor to a bar-b-que. This party was a semi-disaster. I’m a vegetarian so the burgers and hot dogs theme fizzled. And when I brought a big bag of marshmallows the host turned her nose up at my sweet gift. She mumbled, “I don’t like those puffy things.” I darted, “Everyone loves roasted marshmallows!” And the bickering escalated. So, I took my unwanted bag of marshmallows back home. Then, I resorted to cooking an indoor variety of traditional S’mores. I enjoyed my warm goodies in the company of my dog and cat; and watched the Hallmark Channel movie where everyone ends up happy.

Fast forward more than a decade later. This time around, I have updated a healthier version of S’mores.

21st Century S’mores

Dark chocolate squares (I used Ghirardelli Dark Chocolate & Sea Salt Caramel Squares.)

Graham crackers (I used the whole grain, low-fat cinnamon Honey Maid brand. Try Honey Maid made with real honey.)

Marshmallows (I used the traditional type at the grocery store; but you can purchase online all-natural vegan type without any artificial ingredients. Or try toasted coconut marshmallows.)

Indoor Version: While S’mores is traditionally toasted over a smoky, open flame outdoors, this favorite treat can be made another way, too. Each cracker can be topped with chocolate, one marshmallow, then put into a flat pan and under the broiler for both the chocolate marshmallow to brown and melt.


You can also pop a graham cracker open face topped with chocolate and a single marshmallow in the microwave for a few seconds until it is warm and gooey. Place the two crackers together. Other ways to make it inside the comfort of your home include: The cracker sandwiches can also be made by roasting a marshmallow on a metal skewer over the flame of a wood-burning fireplace or open fireplace, a stovetops flame, in a microwave or with a s'mores-making kit. *If roasted outdoors, the graham cracker sandwich can be wrapped in a piece of foil.

A Quest for the Perfect Ready-To-Drink Tea

One Tahoe summer day I picked up a Ready-To-Drink Tea beverage at the local supermarket. I was being adventurous and didn’t care about a brand or flavor. I did want “natural” though. I picked out a large container of a nondescript brand tea.

So, the nutrition label welcomed me with some good things, and not so good things: “No preservatives, sweetened with sugar.” But I scrutinized the nutrition label and read: “Filtered water, sugar, tea concentrate, caramel color tea essence, and malic acid.” Then, I read: “32 grams sugar and 38 milligrams sodium” per 12-ounce serving and 120 calories! It wasn’t my cup of perfect tea (I should have selected a lemony-tea with fun flavors, black tea and unsweetened.)

So, I poured 4 ounces of ready to drink organic lemonade into a 16-ounce cup and filled up the rest with the RTD tea for the hot August day. It was easy (no effort of brewing, straining, washing a kettle or teapot) and took me back to my childhood swimming days and Arnold Palmers with Dad. And, I was surprised at the clean taste of the ready-to-drink tea beverage.

The next day, I tried another brand: Snapple All-Natural Lemon Tea made from green and black tea; 16 ounces give you 10 milligrams sodium, 150 calories, 36 grams of sugar, 42 milligrams of caffeine, filtered water, sugar, citric acid, and natural flavors. The result: “Hello, my name is Cal. I am a part-time RTD fanatic. I love this stuff!” I prefer 8 ounces to cut the sugar, calories, and caffeine; and include the ready-to-drink teas (like this one) in my tea cupboard for busy and/or hot summer days for the energy, tart taste, and convenience of not having to turn on a stove when it’s 85 degrees or hotter.

Fast forward to now. The Snapple All-Natural Lemon Tea made from green and black tea is AWOL on the South Shore! I cannot find it. So, I searched the stores online. I ordered two cartons (six bottles each). Very pricey: 21.00! Two days later: The tea arrived on my doorstep. Surprise! The brand has changed it up! Baby plastic bottles, and no green and black tea noted on the label. I tried writing and calling the company but got nowhere.

So, I went back to Plan B. I found the organic lemonade at Safeway for the taste and convenience of it. Then, I did brew black tea. I mixed it up – and it’s a done deal. I have my RTD lemon tea.

1/2 cup lemonade (I used an all-natural organic brand)

1 cup black tea (I used Bigalow)

Honey (local), to taste (super for summertime allergens)

In a tall glass (or mug), pour lemonade, tea, and honey Stir. Add ice. Garnish. Serves one.

The bottom line: RTD Teas are available in a variety of teas and flavors with or without lemon and sweeteners. These teas are available at major grocery stores, superstore, and convenient stores. Bottled beverages, like RTDS, can be tempting when you’re on the go --  healthier pick than sugary sodas. But keep in mind they can include more sugar and fewer antioxidants than a homemade glass of brewed tea, which give you control over what goes into it.

For the rest of the summer, my plan is to savor my semi-homemade version of the Arnold Palmer -- a non-alcoholic drink that is a mix of iced tea and lemonade. This beverage is a tribute to the famous pro golfer and my father, who, like me, ordered this feel-good, lemon tea beverage with a kick.

INTERVIEW with the Healing Powers Series author and Fiction Writer

As a native Californian, Cal Orey, M.A., is an accomplished author- journalist and fiction writer. She grew up in the post-hippie era. In her teens she rebelled against processed canned and frozen foods and meat. Blame it on she sensed a plant-based diet was the key to better health, staying lean, and keeping in balance with her mind and body. Plus, my latest release HERBS AND SPICES continues to get noticed by major publications including Huffington Post, New York Daily, Newsmax magazine, and libraries worldwide. And I dish up weekly to monthly columns on food and Earth changes. Read on -- an interview about my timeless series.

Q: Sugar or Fat? Which one does a writer need more?

Fat. I used to be a sugar junkie. These days, when I incorporate real butter (no fake stuff for me) and oil(s) with superfoods, I’m satisfied and keep lean and fit. Sugar on occasion in natural ice cream and a homemade cookie or brownie finds its way to my life, but only in moderation.


Q: Your writing resumes are impressive. Two degrees in writing, three decades of articles and book experience. How did you end up as the Healing Powers Series author?

A: Before finishing grad school at San Francisco State University, I was a published magazine writer. I used to write countless articles for well-known national mags on topics from animals to men. I spun both fiction and non-fiction. Then, I moved over to women’s mags and wrote about every romance and relationship subject imaginable. Fast forward to 1999. I got my first real book deal from Kensington, a New York publisher. (I had penned dozens of diet-related mini mags found in grocery stores.) The Vinegar book #1 paved the way to a series. Many moons later, I was known as the Healing Powers author. I’ve written nine books on superfoods: vinegar, olive oil, chocolate, honey, coffee, tea, superfoods, essential oils, and herbs and spices. (Most of these books have been embraced by major book clubs including, One Spirit, Literary Guild, Quality Paperback, and Good Cook.)
Q: Your Healing Power series has also been translated in 20 languages; Congratulations! Tell us a little about the past and new updated and revised olive oil book.

A: When I started the vinegar book, red wine vinegar was supposed to be the new twist.  During my research, however, I discovered while it does contain some good for you compounds like resveratrol (found in red wine), I needed more information to honestly tout vinegar’s health benefits. I fell into the wide world of the Mediterranean Diet and lifestyle because it includes not only red wine but healthful olive oil—and that superfood led to the first and second edition—The Healing Powers of Olive Oil, A Complete Guide to Nature’s Liquid Gold, Revised and Updated. The first edition is my second best-selling book and now the second edition has been released--three formats. Vinegar has sold more than 1/4 million copies.
Q:  Did you discover any real surprises while researching your books?

A: I found out that other oils, including coconut and canola, have healing perks. Combining olive oil with other oils can help fight fatigue, infections, and insomnia, and help you to fight fat and shape up! Tea? I'm still in love with chamomile (it keeps you young) and adore white tea! Superfoods? Ah, pizza, cheese, potatoes, ice cream? You betcha. The right kind in moderation, though. 


Q: What's an interesting fact about olive oil that most people don't know?

A:  Discovering the you can combine a variety of oils is becoming more commonplace in the kitchen; even seen on Food Network with its creative celeb chefs as well as every day folks are teaming these oils in entrees to desserts as well as home cures and beauty recipes.


Q: Did you learn something new that will shock readers?

Vinegar and Essential Oils for
American Heart Health Month
A: Bring on the butter —especially the right kind and right amount. When paired with oils, this twentieth-century “forbidden” saturated fat is a new twenty-first-century health food. I’ve learned that while I was sneaking butter into my recipes and diet that I was doing the right thing. Lose the margarine! And add herbs and spices for more flavor.


Q. Do you have a personal favorite dish that you use two oils instead of just olive oil?


A: Chocolate! I simply adore chocolate semi-homemade brownies. It makes my kitchen smell like I’ve soared to Chocolate Heaven and the taste and crunch with nuts and chewy coconut takes me away to a happy place.

A. The Healing Powers of Vinegar, gift size 3rd edition, The Healing Powers of Superfoods and The Healing Powers of Essential Oils are my newest additions. And my latest release? The Healing Powers of Herbs and Spices--a spicy adventure that takes you around the world, past and present.
