Every year, on the second Sunday in May, countless mothers are treated to a morning off and breakfast in bed. 

It’s a sweet tradition fueled by the best of intentions.

However – and I speak from experience here—sometimes those kid-and-husband-prepared Mother’s Day breakfasts can be less than stellar.

All these years later, I still remember scraping overcooked, unsalted scrambled eggs and burnt toast into the trash when the kids weren’t looking. I also remember scraping dried-on eggs out of the skillet and cleaning up a kitchen disaster zone later that morning.

Good intentions notwithstanding, I think we can do better. And we should! Because Moms make the world go round. 

Mother’s Day is the perfect opportunity to show her just how much she means to us. What better way to do that than with a homemade breakfast fit for a queen?

This Baked Nutella French Toast is a deliciously decadent breakfast or brunch dish that’s surprisingly easy to make.

In fact, the whole thing can be prepared the night before, stored in the refrigerator, and popped into the oven in the morning. And believe me, the sight of a clean kitchen is something Mom will appreciate almost as much as this scrumptious breakfast.

But you don’t have to wait until Mother’s Day, or even be a mom, to enjoy this decadent breakfast delight. 

Whether you’re treating yourself to a lazy weekend brunch, impressing guests with a gourmet breakfast, or simply satisfying your sweet tooth, Baked Nutella French Toast is perfect for any occasion.

And so easy to make!

How To Make Baked Nutella French Toast

As someone who loves to entertain, I’m a longtime fan of breakfast casseroles (such as my Breakfast Monte Cristo, Blueberry-Lemon, and Cranberry, Ham, and Swiss Casseroles). These dishes can be prepared in advance, allowing you to keep the focus on your guests.

While this dish may look and taste like something you’d find at a fancy brunch spot, it’s actually very easy to make. With just a few simple ingredients and minimal prep work, you can whip up an effortlessly elegant gourmet breakfast that your family will love.

You’ll start by layering a nice dollop of Nutella between baguette slices, creating a sort of Nutella sandwich. (If you’ve got little people helping out in the kitchen, this would be a great job for them.)

All those yummy little sandwiches will go into an ovenproof baking pan or casserole. Then you’ll whisk together eggs, milk, vanilla, and salt and pour it over sandwiches. The egg mixture should soak into the bread for two hours or overnight.

While the stuffed Nutella French toast is soaking, you’ll make a simple stovetop strawberry sauce with fresh berries, sugar, a little lemon juice, and a lot of love.

Once the Baked Nutella French Toast comes out of the oven, spoon some of the fresh strawberry sauce over the top and serve.

Baked Nutella French Toast –Substitutions And Tips

Feel free to get creative and customize this recipe to suit your tastes.

You can try different types of bread if you’d like. And while I happen to think that strawberries are an ideal flavor pairing with Nutella, you could also try making the sauce with blueberries or blackberries. I’m sure they’d be delicious too.

If berries aren’t your thing, or if you don’t feel like making the sauce, you could simply slice some bananas on top and drizzle with a little maple syrup and melted butter. Yum!

Please note that this is a BIG recipe, enough to feed six hearty appetites or twelve light eaters. If you’re not feeding a crowd, simply cut the amounts in half. Or even in quarters.

(Can substitute frozen strawberries)1 cup granulated sugar1 tsp lemon juice Cook Mode Prevent your screen from going dark Instructions Layer twelve baguette slices into a large, 9×13 oven proof baking pan. Spoon a generous dollop of Nutella, about a tablespoon, onto each slice and top with a second slice. (You won’t use all the Nutella, reserve the remainder for serving or another purpose.)In a large mixing bowl, whisk together the eggs, milk, vanilla, and salt. Pour the egg mixture evenly over the prepared stacks of bread. Cover baking pan with plastic wrap and place in refrigerator.After an hour or two, turn over each bread stack, so the top slices of bread are now on the bottom and have a chance to absorb the remaining egg mixture. Cover the pan with plastic wrap and put it back into the refrigerator for at least one more hour or overnight, until the egg mixture is mostly absorbed into the bread.When ready to bake, preheat the oven to 350 degrees and bake for one hour.While the French toast is baking, make the strawberry sauce. Stir the diced strawberries, sugar, and lemon juice together in a heavy-bottomed pot over medium heat. Use a potato masher or the back of a wooden spoon to crush the berries and release some of their juice.Bring the berries to a boil, then reduce heat to low and simmer for 15 minutes, until the sauce has thickened.Remove the pan from the oven. Heat the remaining Nutella in the microwave for a few seconds, until it becomes thin enough to pour. Place French Toast stacks onto plates. Handmade Gifts Are Special, Including this DIY Chef’s Apron

If you’ve followed my blog for a while, you’re probably aware that gift giving is one of my love languages.

You also probably know that, as far as I’m concerned, handmade gifts are the best gifts.  The time, effort, love, and creativity that goes into crafting a present with your own hands makes it truly priceless.

However, when I go to the trouble to make a gift for someone I love, I want to make sure it’s something they will actually use.

Over the years, I’ve shared lots of tutorials for DIY sewing projects and other handmade items that make good gifts and are actually useful. My DIY Jar Openers fit the bill, and so do my One Hour Tote Bags.

In fact, the tote bags served as the jumping off point for the DIY Chef’s Apron. I had some leftover lightweight canvas leftover from that project that I thought would make super cute aprons.

I was right!

Not only are is this DIY Chef’s Apron adorable as all get out, it’s fairly simple to make. This isn’t a project for an absolute beginner, if you’ve got a sewing machine and know how to use it, you should have no trouble making these aprons in two hours or even less.

So let’s get to it!

Handmade Gifts: DIY Chef’s Apron – Fabrics, Notions, And Tools

The fabric and notions needed for the handmade gift

Here’s what you’ll need to make your apron. If you sew, you probably have everything you need already on hand, apart from the fabric. You can find easily find lightweight canvas fabric in lots of pretty patterns and prints at local or national fabric and crafting stores. I got mine at Michael’s.

From the ¾ yard apron body fabric cut…

One 22×22 inch squareOne 12 x 12 inch square

From the ¼ yard contrast fabric cut…

One strip, 4 inches by WOF (Width of Fabric)

Sub-cut this strip by cutting one 4×5 inch patch from one end (This pocket is optional)Cut the remaining strip in half lengthwise, creating two 2-inch strips, approximately 38 inches in length.

Once the fabrics are cut out, you’ll be ready to start sewing your apron!

Take note that all seams are ½ inch unless otherwise indicated. There is a lot of top-stitching in this project. Top means sewing very close along the outer edge on the top side of the fabric in a smooth and even line.

This apron really is fairly easy to make. Just be sure to read the directions carefully, take things one step at a time, refer to the photographs, and remember – handmade gifts are worth the effort it takes to make them!

Step One: Making the trim and ties

Place the two shorter 2-inch strips right sides together and sew the short ends together, creating a single strip, two inches by approximately 75 inches.

Fold the short ends of the each of ALL four 2-inch strips toward the wrong side of the fabric approximately ¼ inch and press with a hot iron.

Fold each of the strips in half lengthwise, wrong sides together, and press, creating a crease down the center of each strip. Working one at a time, lay each strip on the ironing board with the wrong side up.

Fold the unfolded, raw edges of each side toward the center crease and press, creating a double-folded strip (similar to double-fold bias tape). With the side and end edges folded under, press along the center fold once again, using steam to set the seams. Do this with all four strips.

Take the 2×15 inch strips. Topstitch along the long, double folded edges. These are the upper ties of the apron. Set them aside for now.

Do not sew the other strips at this time.

Step Two: Making the lower part of the apron

Fold the left and right side of the 22-inch square under approximately a quarter of an inch and press. Fold over once again and, so the raw edge of the fabric is hidden.

Topstitch along the folded left and right sides of the apron body.

As you did for the above, double fold, press, and top stitch the bottom edge of the apron.

Take the long, 75-inch piece of double-folded trim. This will serve as both a decorative trim and the ties at the waist, so the apron body will be pinned in the middle of the strip, so the ties extend equally on both sides of the apron. To do so…

Unfold the trim and place the top, unsewn edge of the apron inside the folded strip along the crease and matching the mid-point of the apron with the center seam that joined the two strips. Fold the trim over and pin the trim to the apron body, so the raw edge of the fabric is concealed inside the fold. (The unpinned sections of trim will extend approximately 27 inches from both sides of the apron.)

Top stitch the trim along the bottom, double-folded trim edge in a single seam, creating two ties on either end and a decorative trim along the edge of the apron.

Step Three: Making the apron bib

As you did for the lower apron section, double fold, press, and top stitch the 12×12 apron bib square on the left and right sides.

Take the 11-inch double folded piece of contrasting trim. As you did for the trim on the apron body, place the top edge of the apron bib inside the folded piece of trim. Pin so the raw edge of the fabric is concealed within the folded trim and the ends are even.  

Topstitch along the folded edge of the trim, making sure to catch sew through all the fabric layers — both double folds of the trim and the apron bib layer). The end edges will be bulky. Sew slowly and coax the fabric along. (At the beginning, you may even need to lift the presser foot and scoot the fabric along a bit before lowering it and taking another stitch.)

Fold the bottom edge of the apron bib under a HALF inch and press, the fold and press again (This fold is wider so it will be easier to attach to the apron body). Do not sew the bottom edge at this time.

If adding the optional pocket to your apron, fold all four edges of the 4×5 square under a quarter inch and press. Top stitch ONLY the upper edge of the pocket at this time.

Position the pocket in the center of the apron bib and pin into place. With the edges folded under, top stitch around three sides of the pocket, leaving the previously stitched upper edge open.

Step Four: Joining the bib and the apron

With right side of the bib facing the wrong side of the apron, center and pin the folded and still unsewn bottom bib edge to the apron, aligning it with the the trim. (See photo below. The bib will extend above the lower section of the apron.)

Top stitch the ties and trim once again, this time along the upper, single folded edge of the trim, joining the bib to the apron as you sew this second line of top stitching.

(Though it isn’t necessary for functionality, you can hand sew the bottom, folded edge of the bib to the inside section of the trim if you’d like. If you do so, make sure to only sew through the back fold of the trim, so the stitching can’t be seen from the front.)

Step Five: Attaching the upper ties

Hand-stitch one of the 15-inch upper ties to each upper corner of the apron bib. (The corners will be too bulky for most machines, so hand sewing is easier.

Sew through the back fold of the trim so the stitches won’t be visible from the front, and make sure your stitches are strong and secure.

You did it! Your DIY Chef’s Apron is all done and you now have yourself a handmade gift that anyone would love to receive. Good job!

Cheesy Cauliflower Pasta with Pistachios – A Delish Way To Get Your Veggies

As study after study tells us, working more vegetables into our diet is one of the best possible ways to improve our health over the long term.

Fortunately for me, that has never been very difficult. I’ve always loved vegetables. However, since we started leaning more heavily toward the principles of the Mediterranean Diet, I’ve been looking for even more ways to incorporate vegetables into our meals (find my recipes here!).

My husband has been on board with the program just as long as the meal in question fulfills one crucial criterion.

Veggies or no veggies, it’s got to taste good.

Though it took me a few tries to get it just right, Cheesy Cauliflower Pasta with Pistachios passed the test.

This recipe is inspired by one I found in my new favorite cookbook, The Mediterranean Dish. We’ve loved nearly all the recipes in it, but the recipe for Cheesy Cauliflower with Fusilli and Pine Nuts didn’t quite work for us.

A few adjustments to the ingredients, spices, and preparation method resulted in a version that was just right for our family and passed my husband’s taste test with flying colors.

Though he’s never been a huge fan of cauliflower, he really does like this dish. So much so that it’s now making a regular appearance in our monthly meal rotations.

I’m betting that your family will like this cheesy, yummy, healthier twist on macaroni and cheese just as much as mine does.

Making Cheesy Cauliflower Pasta with Pistachios

This recipe starts with boiling the cauliflower in generously salted water.

The leftover water will be used to boil the pasta too, imparting a little more flavor. But some of it will also be used to help make the smooth, tasty cheese sauce.

However, the real magic comes from cooking the chopped cauliflower in a generous but not ridiculous amount of olive oil with a little garlic until it is a gorgeous golden brown. This step absolutely transforms the taste of the cauliflower, mellowing the flavor into a savory deliciousness that melds beautifully with the cheeses.

Speaking of cheese.

If you’ve ever been to The Old Spaghetti Factory, you probably know about their famous mizithra spaghetti. It’s one of the most popular items on the menu and has been my favorite for many years.

That’s why I decided to use mizithra, a tangy, salty, sheep’s milk Greek cheese, in this recipe. It’s delicious, slightly unusual flavor really wakes up the taste buds in a very good way.

The specialty cheese counter of most grocery stores should carry it. In a pinch, you could substitute sharp white cheddar or Cojita, but I do think it’s worth the effort of seeking out. It really adds a lot to the dish.

Much as I love mizithra, it really needs a partner to help balance the flavor. That’s why this recipe calls for an equal amount of pecorino Romano cheese, which is the same blend The Old Spaghetti Factory uses.

A Delicious (And Important) Final Touch

Once you’ve combined the pasta, golden brown cauliflower and garlic, a touch of red pepper, and made a smooth, yummy sauce with the cheeses and leftover cooking liquid, you’ll just need a final touch.

A generous sprinkling of chopped pistachios is really the cherry on the cake of the delightful dish. They add a touch of color, a nutty, sweet flavor, and a lovely little crunch to every mouthful.  Whatever you do, do NOT leave them out!

Even if I weren’t trying to work more veggies into my diet, I’d pick Cheesy Cauliflower Pasta with Pistachios over regular macaroni and cheese any day of the week. It’s gotten to be a real favorite at our house.

Add the quartered cauliflower to the pot and boil 5 minutes. Carefully remove the cauliflower from the pot to a cutting board and allow to cool.Bring the cooking liquid back to a boil and add the pasta, boiling the pasta for about 7 minutes, until it is just al dente. Turn off the heat. Remove 2 cups of the cooking liquid from the pot, reserving it to make the sauce later. Drain the remaining liquid from the pasta and set aside.Roughly chop the cooled cauliflower into small pieces.Pour the olive oil into a large skillet over medium heat. Add the smashed garlic and fry in the hot oil for a minute or two, until it turns golden brown. Remove the garlic from the oil and discard.Increase the heat to medium-high and add the cauliflower to the pan. Sprinkle on the red pepper flakes and cook in the oil, stirring occasionally, for about 15 minutes, until you see deep golden, brown spots on the cauliflower.Lower the heat to medium and add the pasta to the pan. Add ½ cup of the preserved cooking liquid to the pan and cook for an additional 4-5 minutes, until the pasta is tender but not soggy.Sprinkle the pecorino Romano over the pasta and cauliflower and stir, adding another 1/2 cup of the cooking liquid to help the cheese melt more easily. Add the mizithra to the pan and stir. If needed, add another ¼ to ½ cup of cooking liquid make a smooth, creamy cheese sauce. Things I’m Loving Now – Spring 2024

As far as I’m concerned, it really is the little things.

With that in mind, I thought I’d share a few of the things I’m loving now that are making the delights of spring even more delightful. Because some things are just too good not to share.

Quilty And Crafty Things I’m Loving Now

While researching patterns to make a quilt for our seventh granddarling, who will make her appearance this summer, I stumbled upon the SheCanSew website and blog and quickly fell in love. There are so many fantastic patterns here, and they’re all free!These tiny vases are just darling and perfect for single bloom or sweet little mini-bouquets to brighten up your home or give as gifts.

One of my online friends mentioned that she creates a special, keepsake felt ornament for her grandchildren every year. Isn’t that a wonderful idea? I’ve decided to do the same and am starting with this fun polar bear pattern I got on Etsy. After a friend posted a photo of this adorable miniature bookshop she’d built from a kit, I had to try it for myself. It will take me some time to finish it, but so far, so good! The instructions are very clear.  Though I enjoy all kinds of crafting and fiber arts, I’ve always found painting a bit intimidating. The Watercolor Workbooks from Emily Lex Studio have easy-to-follow instructions that have given me confidence and helped me paint very pretty pictures!

Money-Saving Things I’m Loving Now

The face cream I’ve absolutely loved for years (BareMinerals Butter Drench) has gotten so expensive that I thought I’d have to switch to another brand. Luckily, I found LaLaDaisy.com with discounts of 20-60% off of many (but not all) major brands of cosmetics. Thanks to them, I was able to get my face cream for $30 instead of $44. And the shipping was free! This website is a real find.Eyeglasses from Costco! They’ve got so many great choices of frames, and couldn’t believe what a bargain they were. I was able to get both regular and prescription sunglasses for less than I paid for a single pair of glasses last year.We’ve been using these microfiber cloths for almost a year now, and I just love them. They’re advertising for cleaning glass, but we actually use them as a substitute for paper towels, which we’ve practically quit buying now. It’s good for my pocketbook and the environment. We’ve washed them over and over and they still work great!We eat a LOT of yogurt around here. Investing in my own yogurt cooker and making my own has definitely paid off over the years. I’ve had my yogurt maker for years and years but this newer model seems like a great deal. 

Things I’m Loving Around the House And Kitchen

It might sound crazy, but of all the things I’m loving, this reusable lint roller and pet hair remover might be my favorite. This sucker picks up dog hair like nobody’s business! Last week, after vacuuming my office rug thoroughly, I got down and ran this baby over the rug. I could not believe how much hair it picked up. I’m pretty sure that every pet owner on my Christmas list will be getting one next year.The Frontgate Resort Towel Collection is hands down the best, softest, and most luxurious towels I have ever owned. After reading a glowing review in the NYT’s Wirecutter column, I decided to give them a try for myself. They’re just incredible, as plushy, soft, and elegant as any hotel towel. A bit of a splurge that’s worth every dime.

This terrific electric tea kettle gets a regular workout at my house. It brings water to a rolling boil in as little as one minute and features an automatic shutoff, so I don’t have to worry about walking away and accidentally letting the kettle boil dry. And what am I using all that boiling water for, you ask? To make cup after cup of this Twinings Decaffeinated English Breakfast Tea. Because too much coffee makes me jittery. Another good for me treat I enjoy on a regular basis is no-butter or oil popcorn made in this nifty microwavable silicon popcorn popper. We like it so much that we’ve even given it as gifts. I have a lot of cookbooks, but The Mediterranean Dish cookbook has become one of my very favorites. I’ve cooked scores of recipes from it (even those that don’t have pictures!), and they’ve all been terrific.

Miscellaneous Things I’m LovingThis might seem like an odd addition, but if you’re as interested in theology as I am, you’ll be fascinated by this book, Church History in Plain Language, by Bruce Shelley. It gives a complete history of the church in language that, while not dumbed down, is straightforward enough for a layperson to understand. As a dedicated road warrior, I have long been a fan of Chico’s Travelers Collection. My latest purchase was this gorgeous Crushed Jacket. It’s reversible and looks great over my black Traveler’s slacks and top. Another travel goodie I’ve fallen in love with of late is this nifty set of travel bottles. It’s a tidy, compact way to store your shampoos, conditioners, facial wash and such.

I’ve always loved listening to music on Pandora, but lately, I’ve been on a country music kick. My Dolly Parton station is full of the familiar songs I grew up listening to, sing-along selections from Loretta Lynn, Patsy Cline, Tammy Wynette and, of course, The Divine Dolly. However, I’ve also really enjoyed the thoughtful, female singer-songwriter vibe of my Brandi Carlisle station, with music from Brandi, Patti Griffin, Tanya Tucker, The Chicks, Miranda Lambert and, once again, Miss Dolly. (Some people are just timeless.)At the end of the day, the thing I am loving most this spring is spring itself! After a long, wet, gloomy winter, the joy of birdsong, blooming flowers, and a good walk on a warm (or at least warmish) day is immeasurable!

DIY Confetti Easter Eggs – Memories Of Mexico

My family and I lived in Mexico during the last half of the 1990s. It was an exciting adventure. Though adjusting to a different culture and learning a new language was challenging, we all have fond memories of our years in Mexico.

When Easter rolls around, I always find myself thinking about confetti eggs, a fun and festive Mexican tradition.

As the name implies, Confetti eggs are dyed eggshells are stuffed with colorful confetti. In Mexico, kids would chase each other with them, trying to crack the shells over each other’s heads, releasing a joyous, harmless shower of confetti.

My three wild boys absolutely adored confetti eggs, and so did their friends. Birthdays and holiday parties often included a confetti egg chase, but sometimes, I would buy them just for fun.

You could purchase them in the outdoor markets for a peso apiece when we lived in Mexico, which was about ten cents at the time. On the money-to-fun factor ratio, they were a bargain.

After returning to the United States, I learned to make my own, and I’m so glad I did. Making confetti eggs for our annual Easter egg hunt has become a much-cherished family tradition.

Of course, you could make these DIY Confetti Easter Eggs all on your own as a surprise for your family or friends. But it’s also an easy craft activity with kids of just about any age.

What You Need to Make DIY Confetti Eggs

Going from eggs to eggshells takes little time and care, but it’s not a difficult process. 

Take the blunt end of a spoon and very gently tap it against the end of one of the eggs until the shell begins to show some small cracks.  Use your fingers or the spoon to pry off some of the cracked shells, creating a small opening at the top, about one inch in diameter.

(This part requires a steady, gentle hand and is probably best left with grownups. All the remaining steps should be pretty for most kids to help with. )

Turn the egg upside down over a bowl or other container and gently shake so the egg slips out of the shell. The white usually comes out first and fairly easily. You may need to shake a bit harder to get the yolk out or the end of a knife, scissors, or stylus to poke and break the yolk. 

Continue the process with all the remaining eggs. Preserve the egg whites and yolks for another use. (This would be a great time to cook a batch of Make Ahead Mediterranean Egg Cups!)

Rinse the empty shells inside and out with warm water and put aside.

Step Two: Dying the Eggs Shells

Making your own egg dye is simple.

Fill a heat-proof container with 1 cup of boiling water, 2 teaspoons of white vinegar, and 10 to 20 drops of food coloring. Make as many different colors as you’d like. (If the kids are helping make the DIY Confetti Eggs, this is a great opportunity to teach them about how to mix the primary colors of red, yellow, and blue to make secondary colors.)

Place the spoon handle into the opening of the egg, pushing it down into the container of dye so the egg fills with liquid and remains submerged. Leave the shell in the dye for as long it takes to get the color you want.

Remove the shell from the dye, pouring any extra liquid back in with the rest of the dye. Place the dyed shell in the egg carton with the opening toward the bottom to dry, so all the liquid drips out.

Repeat with all the eggshells.

Step Three: Making Confetti 

Of course, you could buy confetti if you’d prefer, but confetti really is very easy to make at home.

Stack several sheets of tissue paper together (the more colors you use, the prettier it will be). Use scissors or a rotary cutter and cutting mat to cut the tissue into strips, about a half an inch wide.

Cut the strips crossways into small pieces of confetti. To fill a dozen egg shells, I use about 2 cups of homemade confetti.

Step Four: Filling and Closing the Eggs

Make sure the eggs are dry before you fill them, so the confetti doesn’t end up sticking to the interior of the egg after the shell is cracked.

Use your fingers or the blunt end of a pen or pencil to push the confetti into the opening of the shell. Fill the whole shell loosely with the confetti.

After all the eggs are filled, cut squares of tissue paper big enough to cover the openings of the shells. Paint a thin like of glue around opening of the shell. Place the tissue square on over the opening and gently push down into the glue.

Store the filled and covered confetti eggs in the carton until ready to use.

Seasoned Steak and Tomato Salad – Mexico Inspired, Made At Home

A deliciously tasty, satisfying salad that’s bursting with flavor and fresh ingredients. My Seasoned Steak and Tomato salad is a healthy, one-dish dinner the whole family will love! Great to make ahead!

Seasoned Steak And Tomato Salad – Mexico Inspired, Made At Home

My husband and I just returned from an almost two-week-long vacation with stops in Florida and Mexico. This was the first non-working vacation I’ve taken in many a year, and it was pure heaven.

Though it is wonderful to see my darling dog and sleep in my own bed again, I have to admit that I’m finding the re-entry process a little more difficult than I’d anticipated. I’m sure things will improve when we get through the current bout of rainy Pacific Northwest weather. But who knows how long that will take?

This being the case, I decided to take things into my own hands by recreating some of the recipes I enjoyed and took note of on our trip, including this Seasoned Stead and Tomato Salad.

It’s my version of a dish I tried during a fabulous buffet dinner and the “Fiesta Mexicana” show we enjoyed during our trip to the Yucatan. There was no end of delicious food served that evening. But this dish caught my eye for a few reasons.

First, it seemed like something I could recreate at home.

Second, even though it employs classic Mexican flavors and ingredients, it adheres to the Mediterranean diet principles I’ve been trying to stick with – lots of veggies and whole grains, small amounts of meat.

Third, it tasted really, really good! (And isn’t that what matters most?)

Why I Am Loving This Seasoned Steak And Tomato Salad

To start with, it makes the most of a relatively small amount of meat. 

We’ve never eaten much red meat around our house. But every now and then, I do get a craving for beef. This Seasoned Steak and Tomato Salad lets me satisfy that craving with sensible portions and seasonings that really bring out the flavors of the meat.

Also, this is a one-dish meal. With a little bit of steak, a lot of great fresh veggies, enough rice to make you feel full, and a flavorful dressing with olive oil, lime juice, and yummy spices, you really don’t need to serve anything else for dinner. As every busy cook knows, one-dish dinners are the way to go!

Speaking of busy – Seasoned Steak and Tomato Salad is easy to make ahead, which I love. After a long day at work, I really do love knowing that dinner is ready to serve.

And this is one of those dishes that tastes even better the next day after the seasonings and spices have had a chance to meld into the ingredients. If covered and stored in the refrigerator, Seasoned Steak and Tomato Salad should keep for three to four days.

However, very cold tomatoes don’t have an much flavor as those eaten at room temperature, so I do recommend that you take the salad out of the refrigerator about thirty minutes before serving. That’s the best way to enjoy all the wonderful seasoning and flavors.

One more thing I love about Seasoned Steak and Tomato Salad is that it really is a year-round dish. Not only is it hearty enough to satisfy winter appetites, but the ingredients are available in every season.

How To Make Seasoned Steak And Tomato Salad

This is quite a simple dish to make.

You’ll make a marinade with olive oil, lime juice, and seasoning. Half of it will be used to marinate the steak. The other half will be saved and poured over the finished salad as a dressing.

The meat should marinate for a few hours or overnight, so be aware of that. In a pinch, you could cook the steak without the marinade. But I do think it will taste best if you allow time for the meat to marinate.

You can cook the prepared steak in a 400-degree oven to your preferred degree of doneness. It will vary according to the cut and thickness of the steak. (We like our pretty well done, so I cooked it for 14 minutes, 7 minutes on each side.)

Oh, and speaking of steak – you can use just about any type. Strip steak, sirloin, ribeye, or flank steak will all work in this recipe. You could even use filet mignon if you want to. However, I really feel that a good filet mignon is best enjoyed on its own.

When the steak is done, you’ll cut it into thin slices and then use two forks to separate the meat into shreds.  Shredding the meat makes the most of a small amount of steak – just two ounces per serving –  giving a satisfying taste of the meat in almost every bite.

Likewise, you’ll slice the vegetables – tomato, bell pepper, and red onion – very thinly. This will help balance and distribute all the flavors.

With the meat and vegetables ready, you’ll simply toss them into a bowl, add cooked rice and the dressing, and toss thoroughly.

Though I continue to feel a little nostalgic about my trip to Mexico, being able to recreate some of the flavors I enjoyed during my trip is a tasty souvenir of my travels. Give it a try soon!

Airport Survival Tips: Making the Airport Less Stressful

Busy airports and crowded flights add layers of anxiety to traveling. A bit of preparation, the right mindset, and a few pro tips can make airline travel less stressful. And even enjoyable! Read on for Airport Survival Tips.

My Life As A Road Warrior

A lot of people have the idea that authors just sit around in their jammies, think beautiful thoughts, and type all day and every day.

Well, there is indeed a lot of thinking and typing involved (also a lot of muttering under one’s breath and deleting). But that’s only part of the job.

Once the book is done, you need to get out in the world to help your creation find an audience. For me, that generally means going on a book tour that can last anywhere from four to six weeks.

Adding travel for pleasure and a few extra business trips in the off-tour season means that I spend a good twenty to twenty-five percent of my time away from home. As you can imagine, all that travel includes a lot of time in airports and on airplanes.

And in my role as a road warrior, there is something I know for sure. It’s not your imagination; airline travel is more stressful than it used to be.

The good news is you can do something about it. Over my years as a road warrior, I’ve come up with strategies and airport survival tips, and might even help you enjoy the experience of flying.

Making Airline Travel Less Stressful Starts Before Takeoff

Creating a less stressful, more enjoyable flying experience begins long before you get to the airport. Preparation is everything here, so this is the time to lean into your inner good scout to by following some simple tips to help you get to the airport feeling calmer and more in control.

Familiarize Yourself with the Rules

If you haven’t flown in a while or don’t fly often, it’s important to know and understand the rules about what you can and can’t check in your bags or carry on the plane. This article from the TSA provides a thorough list of what is and isn’t allowed. 

Pack Light

Extra luggage or extra luggage weight can be a weight on you, too. Think through the events and activities of your trip, and bring only what you need. Years ago, I came up with a packing system that lets me travel for a whole month with only one checked bag. The post is older, and some of the items I recommended are no longer available, but the system still works. Check it out for packing tips to add to my airport survival tips!

Make a List and Check it Twice

A few days before your trip, make a list of everything you’ll need to bring in the way of paperwork – tickets, confirmation numbers, addresses and phone numbers, and identification.  Assemble everything ahead of time and put it in a folder so it’s all together in one place.

Make another list of things you need to take in your carry-on bag – computer, chargers, medications, books, snacks, etc. Look both lists over before you go to bed the day before your flight. That will help you sleep easier. And then check it again in the morning, just before you leave.

Download Entertainment Apps Ahead of Time

With so many watching shows on their laptops, tablets, or phones, fewer and fewer airlines have inflight entertainment systems. However, most have apps that will allow you to stream shows for free during your flight. Make sure to download them before you board.

Get Some Sleep!

Plan for a good night’s rest before you travel. Check those lists one last time to put your mind at ease, and head to bed a little earlier than usual. The anticipation of traveling can sometimes make falling asleep more difficult than usual, so build a little extra time for rest into your sleep schedule.

Get to the Airport Early

As I said above, it’s not your imagination; airport travel really is more stressful than it used to be. That’s because airports are busier than ever. In the past, the rule of thumb was to arrive at the airport 90 minutes before a domestic flight and two hours before an international flight.

For most metropolitan airports these days, you should arrive two hours ahead of time for domestic travel and three hours ahead for international. If you’re leaving from an especially busy airport or traveling during holidays or peak seasons, you might want to arrive even earlier.

Knowing you have plenty of time to check in and get through security is number one on my list of airport survival tips to make airline travel less stressful! If you get through TSA a little quicker than you thought you would, just grab a bite to eat or take the opportunity to walk the concourses and get some exercise before your flight.

At The Airport And On The Plane – Airport Survival TipsCheck Your Attitude

Hardly a week goes by when the news doesn’t feature an article about passengers behaving badly. There really is no excuse for bad behavior, but I do believe that the stress of travel plays into it.

Following the above tips will help alleviate some of that stress. But entering the airport with a good attitude can also make a big difference, both for you and the people you meet on your journey.

Give yourself a little pep talk as you’re driving to the airport. Tell yourself that this is going to be a good experience. Make a pledge to be calm, patient, and kind to everyone you encounter that day, no matter what happens. And remember, you will get there eventually! Even if your flight is delayed or canceled, it’s not like you’re going to have to take up permanent residence in the airport.

Pack Snacks

Very, very few airlines offer meals these days. Some don’t even offer pretzels! I usually buy myself a meal in the concourse before boarding. However, I always have a few snacks in my carry-on in case time runs short. Protein bars, nuts, or dried fruit are my favorites.

Bring a Water Bottle

You can’t carry liquids through security. If you do, the item will be confiscated by the TSA. But it’s a good idea to bring an empty water bottle in your carry-on luggage and fill it once you’ve gotten through security.

Flying can be very dehydrating, so drinking water during your flight is a must. Having your own supply instead of having to rely on busy flight attendants will make that easier

Wear Compression Socks

On long flights, wearing a pair of light compression socks is a good idea. They’ll help keep the blood flowing, even if you’re sitting for hours in a pressurized cabin. And that will help you feel more energized when you arrive.

I’ve become a big fan of the Blue Maple brand compression socks. They come in cute patterns and colors, are fairly easy to put on, and are relatively inexpensive.

Bring Some Creature Comforts

Another thing you’re not imagining? Airline seats really are smaller than ever. Still, adding a few creature comforts to your carry-on can actually make flying a pleasure!

In addition to the snacks and water bottles I mentioned above, I always bring a good book and a small craft project such as knitting or embroidery. That way, I have something enjoyable to do if the inflight entertainment system goes on the fritz or in the event of a long delay.

Because planes can get cold, even in summer, I like to wear a lightweight travel scarf when I’m flying. You can wear it like a poncho or a scarf, but it makes a nice blanket if you’re feeling chilly. Roll it up, and it works as a pillow, too.

Every now and then, you’re going to be seated near or next to an unhappy, possibly crying child. Hey, babies need to travel, too! That is why I always travel with noise-canceling headphones. They are a little pricey and a little bulky, but I think they’re worth it.

Another less expensive and more space-saving option is to bring along some earplugs. I always try to travel with a couple of pairs anyway because hotel rooms often have thin walls.

Flying definitely isn’t as glamorous as it once was.

But with a little pre-planning and following these airport survival tips, you’ll be ready for takeoff and a much more comfortable and enjoyable journey.

French Onion Soup – A Big Bowl Of “I Love You”

One of the very first meals I made after my husband and I were married (not long after dinosaurs stopped roaming the earth) was French Onion Soup.

Tackling this classic recipe of French cuisine was a bit intimidating for a twenty-year-old bride who was still finding her way around the kitchen. However, as a new and starry-eyed bride, I was anxious both to impress my new husband and to demonstrate my love.

Since the French are renowned in the love department, surprising him with a dinner of French Onion Soup seemed like the perfect way to accomplish my goals and get our married life off to a great start.

And guess what? It worked! Four decades later, we’re still crazy about each other!

Okay, okay.  No matter how delicious it may be, the recipe for a successful marriage obviously involves much more than a crock of soup. That may be a post (or several posts) for another day.

Though this definitely doesn’t qualify as one of those quick-to-cook meals we love, making French Onion Soup is probably easier than you might think.

And one hundred percent worth the effort.

It’s All About the Onions – And Patience

The ingredients for the French Onion Soup

When it comes to making French Onion Soup, the only tricky part is the preparation of the onions. The rest of it is simmering and serving.

You need to slice the onions about one-eighth of an inch thick. Of course, you can do that with a knife, but I really love my Borner V-slicer for this (and so much else). This baby gets a regular workout in my kitchen!  

Once the onions are sliced, it’s time to cook them. This is the most crucial step. While not difficult, it is time-consuming, because you want the onions to be fully and beautifully caramelized, and that takes an hour. So plan accordingly.

You’ll start by melting butter on the stove in a large, very heavy-bottomed pot or Dutch oven. Then you’ll add the sliced onions, a little salt and pepper, turn the heat to low, and put a lid on the pot for about 5 minutes to soften the onions just slightly.

After that, you’ll give the onions a stir, put the lid bad on the pots, and let them cook on low for about 15 minutes. Then you’ll repeat the two more times, stirring the onions every 15 minutes for an hour.

As you can see, after an hour, the onions will be a deep, beautiful brown color and fully caramelized. Caramelization brings out the mellow sweetness of the onions and gives them the depth of flavor that makes French Onion Soup so delicious.

So don’t skip this step! Let the onions cook for the full hour!

The Next Part Is a Lot Faster

Once the onions are cooked, the rest of the soup will come together fairly quickly.

After the onions are cooked, I like to add some fresh, finely minced herbs. The herbs are absolutely necessary but I do think they add complexity and bring out the best in the broth.

This is the point where you stir a bit of flour into the onions to help thicken the broth just a little. Then, you’ll add a bay leaf, beef broth, wine, and a little balsamic vinegar to the pot.

I like to use red wine, but white wine would work too. However, avoid “cooking wine”. It’s got extra salt and not much flavor. Any decent, drinkable table wine will do here. A bit of balsamic vinegar adds a touch of acidity without being too sharp. You could substitute sherry if you prefer.

After bringing the liquid to a boil, turn the heat down to low and simmer for about 10 to 15 minutes.

Finishing and Serving

Traditionally, French Onion Soup is served in individual ovenproof crocks, topped with some thick break and a generous helping of cheese, and put under the broiler to melt.

I have these crocks and use them for all kinds of things – soup, casseroles, pot pies, etc. They go from oven to table easily, and the simple design makes them work with my other dishes.

Those couple of minutes under the broiler add a bit of color and keep the soup piping hot when serving. I just think it looks extra nice that way! But if you don’t have ovenproof crocks, you can also pile some cheese onto bread, toast it in the oven, and then place it on soup in a regular bowl.

As a finishing touch, be sure to sprinkle on some fresh herbs as a garnish. It makes a gorgeous dish even more appetizing.

A big crock of French Onion Soup served with a nice green salad is a delicious and satisfying dinner. You really don’t need anything more. However, you might want to have dessert, too.

Mediterranean Chicken with Dill And Feta Sauce – A Healthy Start To A Tasty New Year

You’ve probably heard about the benefits of the Mediterranean diet these days, which has been shown to optimize overall health and longevity.

But just in case you miss it, let’s review.

Less a diet than a style of eating, the Mediterranean diet includes lots of vegetables, fruit, whole grains, legumes, and olive oil. Fish, poultry, and dairy products are consumed in moderation. Red meats, refined flour, and sweets are eaten rarely.  

If that all sounds a little dry and unappetizing, let me assure you it isn’t. We’ve been leaning hard into the principles of the Mediterranean diet around here for a few months now, and we love it.

The ingredients for the Mediterranean Chicken with Dill and Feta Sauce

Now, I’ll admit that there are quite a lot of ingredients involved in making Mediterranean Chicken with Dill and Feta Sauce, but don’t let that intimidate you!

This is really a very simple recipe involving a flavorful marinade and simple-to-prepare sauce, made from (mostly) fairly common ingredients. Here’s what you’ll need…

Most of the spices are things you likely have on hand, including dried dill, red pepper flakes, paprika, salt and pepper.

However, there are two Mediterranean specialty spices that you may be unfamiliar with – za’atar and sumac. Until I started getting interested in the Mediterranean diet, I’d never heard of either. But I sought them out, and I’m glad I did. 

Za’atar is a blend of herbs like marjoram, oregano, thyme, cumin, and toasted sesame seeds. It’s complex and savory and wonderful but might be hard to find in your grocery store. If you’re interested, you can order it online. Or, you can substitute an equal amount of oregano or thyme or a mixture of the two.

Another spice that might not be familiar is sumac. It’s a tangy, bright tasting spice made from the ground sumac berries. Your local market may or may not stock sumac, but you can order it online. Another option is to substitute a little extra lemon zest or leave it out.  

Making And Serving Mediterranean Chicken with Dill And Feta Sauce

As I said, though the length of the ingredient list may look a little daunting, this is a truly easy recipe.

You’ll simply make an oil, vinegar, and lemon juice-based marinade, mix in the herbs and spices, and let the chicken marinate to absorb the flavors for a few hours or overnight.

While the tenderloins are cooking in the oven, you can quickly stir up a sauce of yogurt, Feta, lemon juice, and fresh herbs and spices. When the chicken is ready, you can spoon the sauce over the top or serve it alongside.

Another option would be to thread the chicken onto soaked bamboo skewers (as I’ve done here) then  grill or broil them and serve them as appetizers with a dipping sauce.

For the chicken and marinade:

1.5 lbs chicken tenderloins1/3 cup olive oil1/3 cup white wine vinegar1 large lemon, zest and juice3 green onions, sliced1 tsp dried dill1 tsp red pepper flakes½ tsp paprika½ tsp za’atar (can sub dried thyme, oregano, or blend of both)1 large clove garlic, minced½ tsp fresh ground pepper¾ tsp kosher salt

For the dill and Feta sauce:

1 cup yogurt2 oz crumbled Feta cheese2 T chopped fresh dill1 small lemon, zest and juice¼ tsp ground sumac (optional)¼ tsp kosher salt¼ tsp fresh ground pepper Cook Mode Prevent your screen from going dark Instructions Mix all the olive oil, vinegar, lemon juice, lemon zest, green onions, dried dill, red pepper flakes, paprika, za’atar, minced garlic, pepper, and salt together in a medium sized bowl. Place the chicken tenderloins in the marinade and stir to coat, submersing chicken in marinade as much as possible. Cover the bowl with plastic wrap and place in refrigerator for at least 4 hours or overnight. (You can also place chicken and marinade a plastic zipper bag instead of bowl.)Preheat the oven to 375 degrees. Line a baking sheet with foil and spray lightly with cooking spray. Remove the tenderloins from the marinade, place them on the baking sheet and cook for approximately 20 minutes, until the internal temperature reaches 165 degrees.While the tenderloins are cooking, mix all the ingredients for the sauce together in a medium bowl.
