Vegan Austin Part 1
As I’m writing this, cool rain is sprinkling down outside. It couldn’t be a larger contrast from my week in a sunny, hot and humid Austin Texas. Vegan Slow Cooker Creamy Indian Lentils and Kidney Beans
It’s getting hot in Durham. We live in a split level house and I think I may have to clear out a space for a summer office downstairs. Avocado Chili Bean Veggie Burgers
Since my Sriracha Avocado Chickpea Salad was a surprise hit I thought I’d share another easy recipe. This time I’ve got some Avocado Chili Bean Veggie Burgers that are perfect for the holiday weekend.
They take no time to mix together and use ingredients that you probably have on hand right now.

Dinner at Plant in Asheville NC
Cheryl and I went on a quick vacation to Asheville NC and it was delicious!I had eaten at Plant last year, but this was Cheryl’s first time.
First I have to give you an apology. The photos aren’t the best quality because I used my phone in lighting that wasn’t great. I still thought you’d enjoy seeing all this wonderful vegan food.
