5 Strawberry Recipes to Celebrate Spring!
Strawberries are popping up in all the grocery stores and I even bought some yesterday. I thought you might be eyeing some yourself, so I want to share a few of my favorite strawberry recipes.

4 Recipes to Get You Through a Cold
I can’t believe that I got sick again! I think this is the 5th or 6th time I’ve gotten sick this year.
2015 has been a year of big stresses so far for me. Our 18-year old cat, Irma, is having kidney issues and our elder dog, Brenna, has elevated liver numbers. Thai Red Curry Vegetables with Sweet Potato Rice
Last night Cheryl went to a hockey game and I was left to my own devices for dinner. I wanted something fun that would also be quick and easy. I came up with a simple Thai Red Curry Vegetables with Sweet Potato Rice.
This week I got sweet potatoes in my CSA. I always have a can of coconut milk in the pantry. I added in a frozen vegetable mix and some bottle red curry paste to make a healthy in a hurry dinner.

Vegan Hot White Chocolate
This vegan hot white chocolate is thick, rich and pretty much unforgettable.It has simple flavors so the vanilla is important so don’t forget it like I did in batch two. I kept wondering why it was bland, sigh. It’s been that kind of, well, winter.
I have to tell you the truth, this is the opposite of fat-free. If you are on a fat-free eating plan try leaving out the cacao butter, adding extra vanilla and some cacao powder to make an oil-free hot chocolate.

Creamy Vegetable-based Vegan Cheese Sauce
This crazy weather has me craving comfort food. It was 9 degrees not so long ago and they say we’re about to get more snow tomorrow. I live in North Carolina not Minnesota! I’m determined to get through this winter with some pasta tossed with my new Creamy Vegetable-based Vegan Cheese Sauce.

Italian Slow Cooker Cranberry Bean Soup with Greens
In my ideal world, I’d eat soup every single day. In fact, I have soup pretty often during the week for lunch. Cheryl isn’t a huge soup person, but even she feels full after a bowl of this Slow Cooker Cranberry Bean Soup.
I used veggies I had on hand already: sweet potatoes, celery, onion and carrots. You can change those out with what you have. I was lazy for this soup and did not cook the onion first! You are welcome to saute them first or use some from the freezer that you sauteed earlier.
