The Elvis Popsicle – Vegan Banana Peanut Butter Fudgsicles
We ate all the Coconut Avocado Fudgsicles and it was time to make another frozen treat.I used ripe bananas as the base for these Vegan Banana Peanut Butter Fudgsicles.
We all know that pureed banana makes an excellent and creamy ice cream. I decided to use its superpower to make an extra creamy popsicle. The only hard part is waiting until they freeze before you eat them!
I don’t call for the Elvis (vegan) bacon addition in the recipe, but I sprinkled mine with coconut baconright before se...

Vegan Blueberry Blintzes from Mastering the Art of Vegan Cooking

I was so excited to get a review copy of Mastering the Art of Vegan Cooking. I love The Shannons blog and always enjoy their recipes.
They do interesting recipes and make the steps simple and easy to understand, so that all cooks can give them a try.
I love the way they dive intoold ways that people cooked vegan, like depression cakes when home cooks had no dairy or eggs available to them to make cakes. There is also a price per serving on the recipes which is a great w...

Vegan Mango Lassi Popsicles
What’s more refreshing than a mango lassi? Vegan Mango Lassi Popsicles! The flavors keep to the traditional lassi with mango, and yogurt with a hint of sweetness, rosewater and cardamom.
You can use any vegan yogurt you’d like for this, but the tangier, the better. I used a plain soy yogurt, but you can also use an unsweetened plain yogurt if you want to control the kind of sweetener you use. Stevia, monkfruit, agave and even simple syrup made with vegan sugar would all work.
These are so s...

Vegan Coconut Avocado Fudgsicles
I am officially obsessed with all things popsicle. My plan is to make one a week all summer long, but I have to admit that my freezer is packed full with my almost daily experiments. The ones I have been eating every day are these Vegan Coconut Avocado Fudgsicles.
I just had to use my ice cream cone popsicle molds again, they are the perfect size for a daily treat or for children.
They are rich and creamy from the avocado. I used a Reed variety of avocado that I got from Mimi Avocado. She h...

Vegan Pineapple Mojito Rumsicles
I’ve been all about popsicles lately. Today, I have aPineapple Mojito Rumsicle recipe for you. Make them into a mocktail-sicle by leaving out the small amount of rum. Without the rum, this could make a great grab and go morning smoothie-pop!
If you do make them with the rum the popsicles must have extra time to freeze solid. If not, you may find yourself holding the stick that pulls out while the pop is still inside the mold. Make sure that when you run cold water over the mold to release th...

Vegan Bánh Mi Scramble from Even More Vegan Food Substitutions
You guys know I love a good tofu scramble. I’ve found some amazing ones during my travels this year, including one at Fiction Kitchen which is even close to home!
ThisBánh Mi Scramble from The Complete Guide to Even More Vegan Substitutions is the most adventuroustofu scramble that I’ve ever seen. I love the quick pickle and can’t believe how smart a way it is to use up some extra broccoli slaw. This would make a great chilled salad in addition to a traditional hot scramble.

Vegan Vanilla Latte Rocket Pops
I was in Chicago last week and really missed my breakfast popsicles! I decided to make Vanilla Latte Rocket Popsthis time so I can alternate it with my Lavender London Fog Popsicles. I think that between the both of them, this already too hot summer will be bearable.
For these pops I made the nondairy milk mixture from scratch. You can skip it if you just can’t wait to make them and use the pre-made sweetened vanilla nondairy milk of your choice. However, I encourage you to give the almond,...
