Do you guys know Jackie Sobon? She runs one of my favorite blogs, Vegan Yack Attack, and is an amazing photographer. Vegan Bowl Attack is her very first book and I’m so glad I get to share her recipe forHearts of Palm Vegan “Fish” Taco Bowl with you today.

She uses hearts of palm to replace the seafood and I love the texture. You can also get it in a regular grocery storemaking it easier to get your hands on than jackfruit for some of you.

Vegan Gluten-free Zucchini Chocolate Chip Cookies

Vegan Gluten-free Zucchini Chocolate Chip Cookies

My first use-up-the-zucchini mission are theseVegan Gluten-free Zucchini Chocolate Chip Cookies.

They are gluten-free from the oat flour and rolled oats – as long as you get bags that are clearly labeled gluten-free. Oats are gluten-free naturallybut...

Vegan Blueberry Buckle – No Oil Added!

Vegan Blueberry Buckle - No Oil Added!

Since I know many of you are on oil-free diets I adapted this recipe to be oil-free as well as soy-free and nut-free. It does usesugar, but you could experimentwith the recipe to use your favorite sweetener.

You could also use a gluten-free baking mix in place...
