Vegan Slow Cooker Menu Plan for 2
This week’s vegan menu plan uses you 1 1/2
to 2-quart slow cooker
to make just enough food for two. Many of the recipes come straight from my book, Vegan Slow Cooking for Two or Just You

Vegan Slow Cooker Curry Pot Pie Topped with Whole Wheat Biscuits
ThisVegan Slow Cooker Curry Pot Pie Topped with Whole Wheat Biscuits is a variation of my original Veggie Pot Pie from The Vegan Slow Cooker. Today’s version has different veggies and is lightly spiced with curry flavors.
In the old version I cooked the biscuits in the slow cooker, and some people didn’t care for theit bicuits being more dumpling-like. In this one we still put the uncooked dough ontop of the stew in the slow cooker. But then we put the crock in the oven to cook the biscuits....

I just can’t wait for autumn any longer so I’m cooking butternut squash, pumpkin, lentil soup this week!Also, all the main dish recipes this week are made right in your slow cooker!

Vegan Butternut Squash Okra Gumbo with Brown Rice
I want it to feel more like autumn. Don’t get me wrong, I’m grateful for the cooler mornings and evenings. But where I live it keeps cranking back up into the mid-ninety’s and beyond. It’s September and I’m ready to feel a chill in the air.
Some of you who live far in the north want the warmth as long as you can have it, but in North Carolina it’s been extra hot this summer and I’m ready for a few cool breezes. The leaves are starting to change, but it’s still like a sauna most of the time.
