Featured recipe from Marilu's table * Chilled avocado salad

Here's a tasty salad that's easy to double or triple for entertaining or taking to parties. It's easy to mix together if you have the cooked quinoa on hand. (We're big fans of keeping cooked grains on hand – they store beautifully in the freezer.)


~*~ ~*~ ~*~

Chilled Avocado Salad

Green * Serves 6


1/4 cup olive oil

2 Tablespoons rice wine vinegar

1/4 teaspoon salt

1/4 teaspoon oregano

1/4 teaspoon cumin

1 avocado, pitted, peeled, and diced

1 cup cooked quinoa, cooled

1/2 cup black beans, cooked or canned (and drained)

1 large Roma tomato, seeded and diced

1 green onion, sliced

salt and pepper to taste


Whisk oil, vinegar, salt, oregano, and cumin in a large bowl. Add avocado and toss gently to coat.


Add quinoa, black beans, tomato, and green onion. Toss gently to mix. Season to taste with salt and pepper. Cover and refrigerate 1 hour.

Spirit Sunday * Meditation

Meditation has been practiced for thousands of years. Originally, it was meant to help deepen understanding of the sacred and mystical forces of life. It's still used as a form of prayer in many religious traditions. It's also commonly used for relaxation and stress reduction, and it can help improve your mental and physical health (everything really is connected to everything, as Marilu says!). It's a way to center yourself and find balance within, so that you can live a more balanced life in the world.


Anyone can practice meditation. It's simple and inexpensive, and it doesn't require any special equipment. And you can practice meditation wherever you are — whether you're out for a walk, riding the bus, waiting at the doctor's office or even in the middle of a difficult business meeting. Meditation is anything that stabilizes the mind and cultivates its natural qualities. There's really no right or wrong way to meditate, there's only what works for you.


One of the simplest forms of meditation is to focus on your breathing. We're always meditating on something – usually we're meditating on our fears, doubts, and cravings. In this meditation, the breath becomes the focus instead.


Just think about your breath (usually by directing your focus at the tip of your nose) and "ride" it in and out. You'll still think about other things – just set them aside mentally, and come back to thinking about your breath.


Sometimes people think meditating means not thinking about anything, but that's impossible. Instead, we change our relationship to thought. When you notice that attention has strayed away from the breath, simply bring it back (no judgment!).


Today, try meditating for 5-10 minutes. Get somewhere comfortable, where you won't be interrupted, and just breathe.

Scrub your way to smooth

Here are a couple of body scrubs you can make yourself (yay!). Treat yourself and your wallet to a spa-quality body scrub.


Peppermint scrub * Mix one cup coarse sea salt with 3/4 cup peppermint tea, forming a paste. Use in the shower to exfoliate and create glowing skin. Works best if you get in the shower and rub the paste all over before turning on the water.


Oatmeal scrub * Mix 1/4 cup oatmeal, 1/4 cup cornmeal, 1-1/2 Tablespoons wheat germ, 2 Tablespoons honey, and 1/2 teaspoon orange or almond extract in a bowl. Add just enough water to make a paste. Scrub your face and body with this mixture to wash off dead skin cells and make your skin feel very soft.


Your favorite gel is now a scrub * Mix equal parts coarse sea salt and your favorite bath/shower gel. Get in the shower and get wet, then turn off the shower and rub the mixture all over, giving rough areas extra attention. Turn the water back on and scrub it all off.


Body silkening cucumber scrub * Cucumbers provide gentle toning and stimulation to the second layer of skin. In a blender, mash three peeled cucumbers. While showering, apply the pulp to a loofa and scrub entire body. Rinse well.


Don't forget to moisturize when you're done!

Featured recipe from Marilu's table * Schoolyard oatmeal cookies

Yes! Vegan oatmeal cookies! And they're as easy as any basic "dry + wet" cookie recipe, with no unusual ingredients.


This recipe is from Joanne Stepaniak's book Table for Two: Meat- and Dairy- Free Recipes for Two. Check it out.

Schoolyard Oatmeal Cookies

Yellow * Makes 12


1/2 cup whole wheat pastry flour

1/2 cup quick-cooking rolled oats (not instant)

1/4 teaspoon baking powder

1/4 teaspoon ground cinnamon

1/4 cup molasses or sorghum

2 Tablespoons canola oil

1 Tablespoon water

3/4 teaspoon vanilla

1/4 cup chopped walnuts

1/4 cup raisins


Preheat the oven to 350F. Lightly grease a baking sheet, or line it with parchment paper.


Put the flour, oats, baking powder, and cinnamon in a medium mixing bowl. Stir together and set aside. Put the molasses, oil, water, and vanilla in small bowl, and mix well. Pour this mixture into the dry ingredients along with the nuts and raisins, and mix thoroughly.


Drop the dough by 12 rounded spoonfuls onto the prepared baking sheet. Flatten each cookie lightly with the back of a spoon. Bake the cookies for 12-14 minutes or until lightly browned. Transfer the cookies to a cooling rack using a metal spatula. Cool completely before storing.
