Here's a tasty salad that's easy to double or triple for entertaining or taking to parties. It's easy to mix together if you have the cooked quinoa on hand. (We're big fans of keeping cooked grains on hand – they store beautifully in the freezer.)

Chilled Avocado Salad
Green * Serves 6
1/4 cup olive oil
2 Tablespoons rice wine vinegar
1/4 teaspoon salt
1/4 teaspoon oregano
1/4 teaspoon cumin
1 avocado, pitted, peeled, and diced
1 cup cooked quinoa, cooled
1/2 cup black beans, cooked or canned (and drained)
1 large Roma tomato, seeded and diced
1 green onion, sliced
salt and pepper to taste
Whisk oil, vinegar, salt, oregano, and cumin in a large bowl. Add avocado and toss gently to coat.
Add quinoa, black beans, tomato, and green onion. Toss gently to mix. Season to taste with salt and pepper. Cover and refrigerate 1 hour.
