The Great Fence Debacle...

I don't usually go on about a lot of personal stuff, but this has just got my goat if you know what I mean.
Hubs and I decided to go with a National Home Improvement Chain to have our fence installed around the house. For several reasons...
* They are a National Chain, obviously they care about ...
- Their product,
- Their reputation, ECT...
Well, this debacle has been going on since the installers showed up to install. Of course Hubs and I are both at our day jobs, so I get the call they are at the house. I wasn't impressed with speaking to the man and should have known something was up when he 'wanted to follow the flags.' both the National Store and his boss set down. I'm like, well you really need to go by the blueprints that we're given to you. --- Like I said, I should have gone home.
Hubs calls when he gets home an says, you are not going to be happy. I get home and there are:
- Piles of dirt every where, which they were supposed to 'rake' in.
- Crooked fence posts,
- Gaps of daylight streaming through the posts and fence,
- At least a 6 inch gap between 2 fence posts,
- And I say the biggest issue of all ... One fence along the house with a gate is A foot back from where it's supposed to be!



Of course I call and email at once, received a call the next day. Oh we're so sorry, we'll have to have someone go our and look at it.
... Let's just say I've been going through this since 06.30.2016.

Strawberry Shortcake

Strawberry Shortcake is one of my all time favorite summer desserts. When pregnant it was strawberry season and lets just say, it's a good thing I had my son when I did or else I probably would have gained 100 pounds from strawberry shortcake alone

I'm picky on my biscuits or cake that is used. If it's a biscuit, it had better be the best biscuit I've had. I find most dry and I'm not thrilled with that, yet I can't stand those yellow fill cake shells they sell in the store either.
My son makes this delicious white cake, it's moist, yet a bit dense to stand up to the strawberries.As I have to have mine pureed and then strained to remove the seeds. I love the puree all over the cake with fresh homemade whipped topping.YUM!!
My kid loves me lol as he'll stand there, puree and strain the strawberries, then make the whipped cream!

Peach & Raspberry Parfait

Peach & Raspberry Parfait
INGREDIENTS2peaches, cut into 2 1/2-inch pieces1 1/2cups raspberries2tablespoons sugar1tablespoon fresh lemon juice1pint vanilla ice cream
DIRECTIONSIn a large bowl, combine the peaches, raspberries, sugar, and lemon juice and let sit, tossing once, for 20 minutes.Scoop the ice cream into bowls or glasses and top with the fruit mixture.

Fun Day Friday - Ahoy, Captain with Captain Morgan's

Ahoy, Captain
Number of Servings 1
1 oz. Captain Morgan® Original Spiced Rum3 oz. rooibos, strawberries, blueberries, raspberries tea1 tbsp agave nectar6 piece(s) fresh berries
Glass: Mason Jar
Brew loose tea or tea bag in 6-8 oz. of water.
Brew hot for four minutes and flash-chill, or cold for one hou
Muddle in fresh berries.
Combine tea with ingredients, shake and pour over ice in a mason jar or coupe glass.
Garnish with fresh berries.

Simple Strawberry Mousse

Simple Strawberry Mousse
Ingredients1 cup finely chopped strawberries1/2 cup sugar, divided5 tablespoons water, divided3/4 teaspoon unflavored gelatinDash of salt2 large egg whites1/4 teaspoon vanilla extract1/2 cup heavy whipping cream
Preparation1. Combine chopped strawberries and 1 tablespoon sugar in the bowl of a mini chopper or food processor, and toss gently. Let stand for 10 minutes. Process until smooth.2. Pour 2 tablespoons water in a large bowl, and sprinkle with gelatin. Let stand for 5 minutes.3. Place 6 tablespoons sugar, the remaining 3 tablespoons water, and dash of salt in a small heavy saucepan over medium-high heat; bring to a boil, stirring just until sugar dissolves. Cook, without stirring, until a candy thermometer registers 240° (about 4 minutes). Add egg whites to gelatin mixture; beat with a mixer at high speed until foamy. Gradually add remaining 1 tablespoon sugar, beating at high speed until soft peaks form. Gradually pour hot sugar syrup into egg white mixture, beating first at medium speed and then at high speed until stiff peaks form. Beat in vanilla.4. Place cream in a large bowl; beat with a mixer at high speed until stiff peaks form. Gently fold one-fourth of egg white mixture into whipped cream. Fold in the remaining egg white mixture. Fold in strawberry mixture. Spoon about 1/2 cup mousse into each of 6 dessert glasses; chill 2 hours or until set.
