Chicken Pot Pie Soup Instapot Recipe

I don’t spend tons of time in the kitchen now that’s it’s down to just me and the husband. But, that doesn’t mean we still don’t have to eat. Of course, eating out is always an easy option, but I don’t think it’s always the healthiest choice because you never know exactly what’s going into the food unless you make it yourself.
Having said this, I have to admit that the Instapot has become my nearest and dearest buddy in the kitchen. It’s oh-so-fast and the clean-up is a snap.
I think you’re going to enjoy the soup recipe I’ve got for you today. This chicken pot pie soup is hearty and satisfying; it takes about 10 minutes of prep and I think it tasted even better when I reheated it for leftovers on the second day.
Can I get a whoop, whoop on all that?
Some General Instapot Tips For Chicken
I typically use 3 chicken breasts for my Instapot recipes…basically, one breast per quart. I also prefer to use skin-on breasts because I think this adds more richness to the broth. It just takes one simple step to pull the skin off before you shred the chicken.
I always make sure to place the breasts on top of the other ingredients with the skin side down. That way, when I sprinkle on extra seasonings, they adhere to the chicken meat instead of the skin, which gets discarded anyway.
I departed from the traditional peas and carrots for this recipe; adding diced green beans and red bell pepper instead because that’s what was in the fridge. And yes, that’s typically how I roll. I thought the bell pepper added just a little more level of flavor.
I use Philadelphia Cooking Cream in this and many of my recipes for a few reasons. It’s got 30% less fat than heavy cream and it comes in a nice container, which I can just scoop a few tablespoons from whenever I need it. I also highly recommend Trader Joe’s 21 Seasoning blend. It adds nice flavor without any artificial additives.
I have a 3-quart Instapot. (The recipe could be doubled in a 6-quart, but be prepared to feed an army if you do, because this recipe easily feeds 4 people, with seconds.)
Chicken Pot Pie Soup Instapot Recipe
3 chicken breasts (skin-on)
4 small-medium sized potatoes (diced in large chunks)
1 small red bell pepper (diced small)
French green beans (diced small)
Chicken broth
Baking & Spices
3 Tb. Cornstarch
2 Tb. Flour
Salt & Pepper
1 Tb. Trader Joe’s 21 Seasoning
Dairy
1 cup of milk
3 Tb. Philadelphia Cooking Cream
Cut up vegetables and place in the bottom of your Instapot. Pour in 1 Tb. of Trader Joe’s 21 Seasoning and stir it into the vegetables.
Add the chicken breasts (skin down). Sprinkle with salt, pepper and more 21 Seasoning.
Pour in chicken broth to the level of the vegetables.
Set soup/pressure cooker function for 6 min. Allow soup to stay on warmer function for another 15 minutes after alarm sounds (if time permits). Otherwise, you can release the steam manually.
Take out the breasts. Remove the skin and shred. Add meat back into the pot.
Mix cornstarch and flour into 1 cup of milk. Pour into the pot. Add Philadelphia cooking cream.
Turn on sauté function and stir soup until thickened.
We ate our chicken pot pie soup with my husband’s homemade biscuits, but an easy alternative is Betty Crocker Bisquick Complete Buttermilk Biscuit mix…just add water, mix, plop them on a cookie sheet and bake.
That is what’s cooking in my kitchen this week! It’s fast, easy and very satisfying. I even got to share some of the leftovers with the kids who came to visit this weekend.

Bold Styling – Indian Floral Appliqued Coat

I like the standard all-black outfit as much as the next girl. But, every now and then I like to step out with some bold styling. This Indian floral appliqued coat drew me in the minute I saw it.
Of course, it’s made with the two colors I love the most…black and red …I knew I couldn’t go wrong! This appliqued coat holds its own, so I kept the rest of the outfit really minimal; even with my jewelry choices.
This elaborate design could easily add bulk, so I pulled things together with a simple belt. When wearing a strong statement piece, it’s important to accentuate the vertical line whenever possible. I achieve this by anchoring the outfit with a solid black bottom and thin-legged pants. The open neckline also draws the eye up to my face.
The floral designs were all stitched by hand. I am amazed by the talent it takes to do such intricate work.
Just like this coat, the Bible says that you are His handiwork. He took care to design you…to weave you together, with a unique blend of talents, abilities and experiences.
Psalms 139 is my favorite chapter in the Bible.
13 You made all the delicate, inner parts of my body and knit them together in my mother’s womb. 14 Thank you for making me so wonderfully complex! It is amazing to think about. Your workmanship is marvelous—and how well I know it.

God knows how to take your life and use it in fabulous ways. Why?…because He created you! He’s not put off one bit by the complicated state of your life because He knows how the pieces were made to fit. And yes, He can even make sense of your crazy. In fact, I have seen Him do his own form of bold styling on more than one woman’s life; including my own!
Just bring your life and lay it at His feet and watch Him weave a design that you never even saw coming.

Find Your Weigh – Six Week Update

I want to say a big “thank you” to all who follow The FABulous Journey…you gals are the best! It’s been six weeks since I launched Find Your Weigh and the companion Bible Study guide. I thought this would be a good time to give everyone an update on how things are going so far.
Let’s face it! We all like benchmarks…we want to get an idea of where we stand. I did a little research and came up with these numbers from the Non-Fiction Authors Association. Although I’m not particularly interested in the sales numbers at this early stage, I am keenly aware of God’s blessing.
“There are all kinds of statistics bouncing around out there, but generally speaking, most self-published authors will likely sell around 250 books or less. A few years ago, the industry was buzzing when statistics revealed that the average self-published author earns less than $500 from her books.”
In six weeks, I have sold just short of 500 copies in the various formats!
I want to send out big hugs to all of you who’ve bought copies of my book and shared my posts! Right now, my primary goal is to get the word out. Ultimately, I wrote Find Your Weigh and the companion Bible Study to help others find hope and freedom from the seemingly endless battle over food and weight. And, I do believe that God wants to walk with us and lend his strength to those, like me, who struggle in this area.

Accessories Elevate Casual Outfits

Casual outfits make up the bulk of our wardrobes. These are the clothes we live in because they are easy and comfortable. But, just because an outfit is casual does not mean it can’t be stylish as well. Accessories elevate casual outfits to make them look finished and polished.
I had the whole family together for a few days in December and new family pictures topped my to-do list. It may be a year ahead of schedule, but this mama was going to make sure I had some good family photos for next year’s Christmas card!
I had the photographer snap a few solo shots of me while we were out. I’ve got to make the most of those hair-fixed and makeup-on moments; especially when I have a professional photographer around!
Typically, casual outfits are not elaborate; often consisting of a few pieces. This simple outfit has a top, wide-legged cropped pants and shoes..easy peasy. But, it just takes a few accessories to pull the look together…in this case, I use a belt and jewelry.
Why Wear A Belt?
I realize my love for belts it’s not shared by all. In fact, I’ve met quite a few women who shun them altogether because they say that they draw too much attention to their mid-section.
Now, I do agree with this viewpoint when the belt is just wrapped around the middle as an afterthought, because belts do have a tendency to shout, “look right here!” However, I believe a belt can add a nice finish to an outfit when worn the right way. I often use a belt in conjunction with a partial tuck.

While belts may be debatable fashion accessories, there’s another belt that we just can’t afford to go without. God’s Word says to…

Everybody’s got an opinion these days and it’s easy to lose the truth in the mix. That’s why we must continue to go back to the unchanging bedrock of God’s Word. This is what ultimately keeps us anchored and secure.

How To Pray When Bad Stuff Happens

So, how do you pray when bad stuff happens? It seems like I am barraged by pain at every turn.
In the last two weeks I���ve received heartbreaking news; two young men���s lives were unexpectedly cut short and another friend’s boy has been diagnosed with a serious illness before much of his life has really even begun…all while another dear friend fights an ongoing battle with cancer. Then, I find out that a famous sports figure and his daughter also died in a helicopter accident.

Some of them I know personally, while others I’ve never met. Still, they are all deeply loved by somebody…and God knows them all by name. As a mother I grieve for their mamas. I can���t help but put myself in their shoes because I know they loved their boys fiercely.
Oh God���help these mamas!
What do we do when bad stuff happens? If you are like me, then your first thought is������God, please don���t ever let that happen to someone in my family���to my kids.��� I think we can all agree that no one ever wishes to feel that kind of pain and loss. But then, there’s got to be more to life than just me and those in my small sphere.
Although I can���t personally relate to their pain on an experiential level, I CAN pray through the emotions of my worst fears.
Admittedly, all mamas have struggled through the fear of what-ifs when our kids don���t answer our calls or come home a little later than expected. Our minds have run through a host of worst-case scenarios while waiting for a text or the sound of the front door opening.
It���s these emotions that fuel my prayers when I hear of someone else���s loss and pain.
Pray, If You Say You Are Praying
I often see pleas for prayer as I scroll through my social media feeds and I typically see the same replies���praying or the praying hands emoji. And, I think that most people mean it when they type those words. The question is���do we actually pray or do we forget all about prayer after scrolling through the cute pictures of babies and puppies?
Our pity doesn’t move God’s hand, but our prayers do!
In recent months, I���ve developed a new habit of praying immediately when I see someone in need. If I type that I���m praying, then that���s exactly what I���m doing…right then and right there.
I park that cursor and I cry out to God on their behalf. Sometimes I���ve felt the pain they are experiencing and other times I can only imagine it. Either way, I join my heart with theirs for just a moment���it���s then that two or three hearts are gathered in His name.
Because, I can be sure the person who posted their request hasn’t forgotten about it. I know it���s an issue that a cute picture just won���t distract them from when they are in the thick of it.
20��For where two or three gather in my name, there am I with them.���
What do I pray when bad stuff happens? I pray for God to move and I pray for the Holy Spirit to hold them close. I pray for God to speak the words and do the things I can’t do.
Prayer is a vital weapon in our arsenal, but it doesn���t do us much good if we don���t wield it on a regular basis. Daily use makes us stronger and it bestows strength upon those for whom we pray.
UPDATE: I just received word this morning that the young boy’s test came back negative for Leukemia!! God answers prayers.

Taste of Jakarta – Gaucho Pants

Today, I’m sharing a little taste of Jakarta, Indonesia from a recent trip with a little fashion mixed in…gaucho pants.
We landed in Jakarta, stopped by the ATM and loaded up my cell phone with a new data card. Then, we were off to explore Jakarta from the back seat of our taxi. My husband and I enjoyed the view of this sprawling city as the meter ticked off the miles…of course, we had plenty of time to take in the sights as we inched our way through miles of traffic.
Traffic is the common denominator of most large, Asian cities. It’s oh-so-dependable in the sense that you can always expect to get stuck in it!
I am struck once more by the ready smiles and generous hearts of the Indonesian people. Each morning, I was greeted by an employee at the breakfast omelet station who went well past the normal “good morning” to ask how I slept the night before and how I was feeling. I actually grew to look forward to our morning chats.
We ate dinner at a lovely Indonesian restaurant around the corner from our hotel. I just had to snap some pics to share with you!
This evening I wore a casual outfit of olive gaucho pants and a denim jacket. I enjoy pairing denim and olive because it breaks up the typical denim on denim routine.
Gaucho pants are a great choice for hot climates because they leave room for air to circulate. They are easy to wear as long as you choose a pair that fits well around the waist to balance out the width at the bottom.
I’m not usually one for signature t-shirts, but this one drew me in with it’s simple message…Better.
Now, THIS is a message I can handle seeing and contemplating just a little bit more. We never have to settle for the same old, same old…we can always choose to do better; to be better! And, God promises to help us do just that.

Tomato Red Pepper Cheese Soup – Instapot Recipe

Last August, my son and his new bride made a last-minute decision to move to Manila to teach at Faith Academy. This is the same school where he and his sister graduated. I have had the unexpected blessing of getting to know his new wife better and of making sure that he gets all his favorite foods….at least once!
Let’s just say that my kitchen has seen more action over the last few months than it’s seen in a couple of years. One of my kids’ favorite meals has always been grilled cheese and tomato soup.
They like it because it’s yummy. I like it because it’s so easy to make. And, the Instapot makes it even faster and easier than ever before! Honestly, I don’t know what I did before I had one of these things.
I like to put a little spin on my tomato soup by including red pepper and cream cheese. So, today I am sharing my recipe for Tomato Red Pepper Cheese Soup.
Since I’m not a big fan of recipe posts that are literally filled with every explanation other than the recipe itself, I’m going to get right to the recipe for those of you who are ready to get your soup on!

Tomato Red Pepper Cheese Soup
Ingredients:
3 cans of stewed tomatoes
1/4 onion – diced
1/2 red bell pepper – diced
3 garlic cloves
1 Tb. olive oil
2 Tb. butter
1 1/2 t. oregano
Chicken broth
1/2 block of cream cheese
Salt and Pepper to taste
Instructions:
Use the Instapot saute function. Add olive oil, butter, diced garlic, onions and red peppers. Saute until soft.
Add 3 cans of stewed tomatoes, oregano and S/P.
Add chicken broth until soup level reaches 1/2 inch below the fill line.
Set Instapot on Soup/Pressure Cooker function for 5 minutes.
After releasing all steam (make sure to cover the release valve with a towel and use protective covering on hands) open the lid and add the cream cheese.
Return the lid for a few minutes.
Use an immersion blender to blend all ingredients.
Serve, topped with cheddar cheese.
This recipe is perfect when the weather is “less than perfect” outside.
Speaking of less than perfect, we’re experiencing the ash fall from the Taal volcanic explosion. Taal is actually a volcano within a lake within a volcano within a lake. It also happens to be a popular tourist destination; located about 45 miles away from the city.
We spent a few days there with our daughter when she was visiting for the Christmas holiday. You can see the dome of the volcano in the distance.
Since yesterday, Taal has been spewing ashes and debris into the atmosphere and thousands of Filipinos have been evacuated.
The volcano is still unstable and earthquakes have been reported in many of the surrounding communities.

��������and the mountains quake��with their surging.[a]
4��There is a river��whose streams��make glad the city of God,
��������the holy place where the Most High��dwells.

Easy Casual Look – A Day Exploring Old Manila

I live in a very hot climate year-round, so the easy casual look is something I have learned to master over the years for my own sanity. It’s great to see all the layered styles on social media, but they just don’t work when it’s hot outside and you’re boiling inside.
Over the holidays, my husband, daughter and I had the opportunity to spend a day exploring old Manila. Today’s pics were taken at the historic Ft. Santiago, which is in the heart of the old walled city. Ft. Santiago was built in the 16th century inside the old walled city of Intramuros. It was also the site where hundreds of Filipino and American POW’s were held and eventually killed toward the end of WWII.
For this day out, I chose a simple t-shirt and cropped jeans. The aubergine color gave me a color boost and it really stood out against the brilliant color of the Philippine sky and the weather-worn stone of the fort.
Here, I used the partial tuck-in to keep the proportions in check. When wearing cropped pants, it helps to keep an eye on the hemline of your top. If the hemline falls too low, you risk making your legs look short and squatty…and those are two adjectives none of us want to hear about our outfits.
The fort is situated just down the lane from the Manila Cathedral. If you look closely, you can spot the two domes of the cathedral in the background.
It was a great time spent with family and an awesome opportunity to explore a place we’d never visited before. Actually, this was our first time to visit this area even though we’ve lived in the Philippines for 11 years.
But then, isn’t that how things often go? We get so bogged down in our everyday routines that we fail to appreciate what’s right outside our door.
I guess that’s what I’m trusting God for in 2020…fresh eyes! I want to see Him in my everyday and open my eyes to the many blessings that I typically overlook in pursuit of the next deadline or project.

New Book, New Year | Find Your Weigh

It’s time for a new book, new year – Find Your Weigh !
The countdown has started; only 10 more days before Find Your Weigh and the Find Your Weigh: Walk In Freedom Bible Study Guide is released into the world. I have literally hovered over my not-so-little chick for almost two years…fed it and watched it grow and grow.
In fact, it’s morphed into something much bigger than I ever imagined in the beginning. What started out as a nightly journal has turned into much more. In fact, I’m more convinced than ever that God promises to be a light unto our path because He knows we can only handle the next step.
He has literally walked with me every step of the way and helped me navigate waters much past my depth on numerous occasions…God is my way-maker.
4 I sought the��Lord,��and he answered me;
he delivered��me from all my fears.

The road’s has been tough to travel at times, but the journey was well worth it. That’s just how God rolls. He calls us to do hard things and then He makes a way where there just wasn’t one before.
I am excited to share Find Your Weigh and Bible Study with you because I believe it carries a message of hope and the path to freedom from the day-in-day-out struggle that many of us have with food and our weight.

We Have Seen A Great Light! | Christmas 2019

I sit here on my last few quiet moments before launching into my list of Christmas activities. The curtains are still drawn, but I can see the sun’s light peaking through the gap at the bottom. Even though I can’t see them, I know that the brilliant rays of the sun are shining just on the other side.

This morning, I was washing a few dishes as Christmas carols played in the background and my mind was drawn to the verse, “the people walking in darkness have seen a great light.”
The people walking in darkness
have seen a great light;
on those living in the land of deep darkness
a light has dawned.
We’re all familiar with the Christmas story, but I think it’s significant that the shepherds were the very first people to hear of Jesus’ birth. There they sat…alone on a dark hill…when suddenly an angel appeared to announce the great news that their savior had been born. In the midst of that dark night, a dazzling light lit up the night and, just like that, their lives would never be the same.
I want to share one of my favorite Christmas songs. I love the line, “the hope of the hopeless was born on that night, when God sent His son and said let there be light.”
Once you have experienced Jesus, once your heart has been illuminated by the truth…you can never go back to what you were. It’s always there…it dispels the darkest sorrow and the deepest longing.
We can rest in the calm expectation that Jesus will shine His light into every situation we face; whether big small, disappointing, crushing or scary.
Now, THAT’S a gift worth celebrating!!
May the dazzling light of Jesus’ birth shine in each of your hearts and homes. His transforming light brings illumination, joy and hope for tomorrow.
