Valentine's will be delicious with Raspberry White Chocolate Scones

Ingredients

3 cups flour

1/2 cup sugar

6 tsp baking powder

½ tsp salt

¾ cup very cold butter, cubed

6 ounces good quality chopped white chocolate

2 tbsp lemon juice

2 tsp vanilla extract

1 cup milk

1 1/2 cups frozen raspberries

Instructions

I start these in my food processor because it is so fast but they can be made just as easily in a large bowl by cutting the butter in with a pastry blender or even 2 knifes held between the fingers.

In a food processor, combine the flour, sugar, baking powder and salt.

Pulse in the cold butter until this mixture resembles a coarse meal. It is very important that pea sized pieces of butter remain in this mixture.

Transfer to a large bowl and toss in the white chocolate.

NEXT

Mix together the lemon juice, vanilla extract and milk.

Pour this over the surface of the dry mixture. Toss all together gently with a fork only enough to form a dough ball. (Note: some people have replied that they needed another few tbsp flour at this point to make the dough form without being too soft. This is not a problem, it very often depends on how the flour is measured.. You could also try not adding all of the liquid at once and holding back a little if necessary.)

When the flour is almost incorporated, add the frozen raspberries.

Frozen berries work best because they are less delicate and easier to incorporate into the scone dough.

It is important that you work this dough as little as possible or the finished scones will be too dense and heavy.

TO BAKE

Roll to 1 inch thickness and cut out scones with biscuit cutter or in triangles with a sharp knife and place on parchment lined baking sheet.

If desired you can brush the tops of the scones with an egg wash of 1 egg beaten together with 1 tbsp water.

You can sprinkle the tops with turbinado sugar if desired but this is, of course, optional.

Bake at 375 degrees F for 25 minutes or until light golden brown. Baking time will vary depending on the size of your biscuit cutter.

Notes

These scones are intended to be quite soft and tender and perhaps just a little rustic looking. If you find the dough a little difficult to handle the first time you make them, add a little more flour to the recipe next time (up to a quarter cup).

I prefer to use frozen raspberries in the recipe because they chill the dough, making it easier to handle and cut out. This can affect the baking time by a few minutes.

Make sure your surface is well floured before you drop the dough onto it, you can sprinkle a little flour on top before you form it into a circle to roll out. The goal is to keep the dough as soft and unworked as possible. So, while you can add more flour while working the dough into shape, don't overdo it or your scones will be less soft and tender.

Another alternative

Another alternative to cutting out these scones is to make them as drop scones. Just use heaping tablespoons of the dough (as much as you can stack on the spoon) on a parchment lined baking sheet. Try to keep the dough as high as you can at the centre, so they don't spread too much. A cookie scoop is also a great way to handle the dough as drop scones.

Newfoundland Raisin Buns

There is nothing like a good old fashioned Newfoundland Raisin Bun with a cuppa tea on a cold January day. When I want to make something delicious I go to local food blog Rock Recipes https://www.rockrecipes.com/newfoundland-raisin-buns/ His buns are better than your mothers.


Newfoundland Raisin Buns

Ingredients

3 cups flour

¾ cup sugar

4 tsp baking powder

½ tsp salt

¾ cup butter

2 tsp vanilla extract

1 cup evaporated milk, undiluted

1 cup raisins, light or dark, your preference. Use up to 1 1/2 cups if you like.

2 tbsp lemon juice

Instructions

I start these in my food processor because it is so fast but they can be made just as easily in a large bowl by cutting the butter in with a pastry blender or just rubbing it into the dry ingredients using your hands like Nan did.

In a food processor, combine the flour, sugar, baking powder and salt.

Cut in the butter until mixture resembles a coarse meal.

Transfer to a large bowl and toss in the raisins.

Make a well in the center of the dry mix.

Mix together the lemon juice, vanilla and milk. Pour into the well and mix only enough to form a dough ball.

Roll to 1 inch thickness and cut out buns with biscuit cutter and place on parchment lined baking sheet.

Bake at 375 degrees F for 20-25 minutes or until golden brown.

Baking time will vary depending on the size of your biscuit cutter. This recipe makes 16 tea buns.

Notes

Only use real butter in this recipe. Substitutes can cause issues with sticky dough etc. 

Make sure your surface is well floured before you drop the dough onto it, you can sprinkle a little flour on top before you from it into a circle to roll out. The goal is to keep the dough as soft and unworked as possible. 

I usually sprinkle on flour and fold the dough only about 3 times. So, while you can add more flour while working the dough into shape, don't overdo it or your raisin will be less soft and tender.

Do not roll them too thin; never thinner than 1 to 1 1/2 inches. The larger the buns the thicker I tend to cut them.

Make sure you oven is well preheated and use aluminum bakeware when possible. Steel/alloy pans can carry heat too quickly and like they do sometimes with cookies, spread wider on the pan before they get the chance to lift.

Welcome to the September Book Club - We Will Meet Again.


Join me on social media for weekly questions and discussions about my latest novel, We Will Meet Again.

Here are the four questions I will be discussing in September.


We Will Meet Again honours the women of Newfoundland and Labrador who kept the home fires burning during the Second World War while the province lost a generation of men.


Was your family affected by WW1 or WW2?

Did your family lose a loved one?

Did you have a loved one come back ‘shell shocked?’

Do you know what 'shell shocked' is?


In the 1940s women could not open a bank account without the signature of a male relative. Without a bank account, she could not buy a house, rent, or buy a car. She even needed her husband’s permission to work. So, when a woman lost her husband in the war she was left to fight her own war at home.


That is having a ripple effect in our province to this day – because of ancestry tests, people are finding out that their parents are not their parents.


Do you know of anyone who found out through a DNA test that their adoption was the result of losing a father in WW1 or WW2?

How did the wars affect your family?


The idea for We Will Meet Again came to me when I was walking my dog in Bowring Park and stopped at the Fighting Newfoundlander statue. I asked myself – where is the female version of that? The statue to the women who fought the war from home.


Do you think there should be a monument for the women who kept the home fires burning?

Who spent hours working for the war effort – collecting clothes, knitting socks and mitts, writing letters?

Or for the women who lost their fathers, husbands, sons, uncles, brothers, and loved ones?


While cleaning out the cupboards Hadley’s granddaughter comes across a hidden box of love letters from her first love, a Newfoundlander who volunteered to serve in the British Royal Navy. It is only then her family discovers that he died during WWII and Hadley married his best friend.


As the story unfolds each woman reveals a secret that has paralyzed their life. They discover how each of them has nurtured a generational trauma and turned it into a family tradition until one of them turns it into a generational strength.
