3 1/3 cup all-purpose flour

You could buy a couple of fish fillets, cod or snapper, dredge them in seasoned flour, and fry them until cooked. Or you could cheat and buy fried fish from your local fish and chip store which is far easier and less messy. If you're still tempted to buy, you will need about 1lb fish.

I went to my favorite new restaurant on Friday night - The Basso Cafe in Norwalk - and there had the most gorgeous ginger gelato. I was still obsessing on Saturday, and remembered that a hundred years ago, for my first wedding, I received an ice-cream maker. Given that I have no recollection of ever having used it, I was amazed that the ice-cream maker survived the journey from London to Westport, and then through five moves. But there it was! I love baking bread. When I lived on Middleduck Farm in the country, I became Mrs Walton, making jam and baking bread every day. The flesh of 4 mangos, chopped
1 3" piece of fresh ginger, peeled and cut into "coins"
1/2 red onion, chopped
2 teaspoons sugar
2 sprigs of fresh thyme, or 1/2 teaspoon dried

Moroccan Fish Cakes (serves 4)
1 1/2 lbs white fish fillets (pollack, cod, haddock, gurnard)
3 tsp ground cumin
½ tsp dried chilli flakes
3 garlic cloves, chopped
½ preserved lemon, chopped
1 egg, lightly beaten
handful chopped cilantro
flavourless oil (vegetable or groundnut), for frying
Pulse all ingredients together in a Cuisinart. You don't want it minced, but still recognizable chunks of fish. Using cool wet hands, shape into patties and put into fridge for one hour to firm.
