Mango Chutney

Mango Chutney

The flesh of 4 mangos, chopped

1 3" piece of fresh ginger, peeled and cut into "coins"

1/2 red onion, chopped

2 teaspoons sugar

2 sprigs of fresh thyme, or 1/2 teaspoon dried

salt and pepper

Combine all ingredients with one tablespoon water in a small pan. Bring to a boil, reduce to simmer, stirring occasionally, for 30 minutes. Cover and set aside until cool - the fruit will collapse further. When cool remove ginger and thyme. Leftovers can be stored in an airtight jar in the...
