“Railroad Cake 1 cup white sugar 1 cup flour 3 eggs butter, the size of an egg 1 tsp cream of tartar ½ tsp baking soda essence [zest] of 1 lemon a little milk Bake in shallow greased pans in a hot oven. Batter will be thick. Some published variations of this recipe suggest it was similar to Irish Soda Cake, but with raisins baked in it. However, the recipe presented here differs in that it is flavored with lemon and lacks raisins and is not similar to Irish Soda Cake. Instead, Mrs. Kennedy’s recipe resembles vintage recipes published in “My Pet Recipes, Tried and True” and “Miss Parloa’s New Cookbook” from the early 1900s.  ”
