My mom read one of Pepper Basham's books called Mistletoe Countess,(like 2 years ago) and after said it was an amazing book, and recently just said she would like to read it over again! She also loves Gabrielle Meyer's books!
Pepper Basham’s Blue Ridge Mountain series is my favorite, but her Authentically Izzy series is a lot of fluffy fun too. Very different vibes depending on what you like.

Also Melanie Cellier is my favorite author! You’ve got to give her a try. Her retellings series are the best.
