This book is almost overwhelmingly dense…I’ll never take a single bagel for granted ever again!

So far: personal history, cultural history, deep dive into ingredients and tech notes like: apparently bagel dough will wreck your kitchen aid, but takes 20 min to knead by hand….which just right off the cuff makes me wonder if I’ll ever actually make these bagels, logistically 🙈 but I’m enjoying the book!
