It probably feels more real coming from an author who lives in Poland versus one who lives in New Mexico, though.

It definitely does! This guy writes like he's actually been dangerously cold at some point in his life. I can't speak for G.R.R.M.'s writing of winter, but...I can't help thinking Sapkowski is doing it from better experiences.
