This book is written by someone who worships French bread and the traditional bakers, and treats the subject like the holy grail. Example: “Some years ago, this sacred object came under attack”. (Because a grocery store decided to carry the baguette at a cheaper price. Like with wine, no one may sell it under the same name, major protests made because no one dares trifle with tradition.) This is in chapter 1.
