The Custard Continuum may have been one of my favorite parts of the book. I particularly like that he includes a recipe for butterscotch, which he's right in saying that there are so few.

I wish I'd read this when I was much younger. I've had all of the techniques down for ages, and long knew about the concept of ratios, but I'd just never had them laid out so simply. Every cook should start out with this book.
The simple knowledge here readily explains how most of the cooks on television seem to be able to apparently pull so much out of thin air.
