As all of Ottolenghi’s books it is beautifully diagramed and has amazing pictures that induce you to cook. This book introduces many new ingredients that come from a variety of places world wide. Right at the beginning Ottolenghi and Ixta introduce the 20 “rare” or “different” ingredients they will use along the book. “Rare” and “different” for those who don’t live in the regions where they are originally from.
