What this could mean:
1) Her eyes were swollen shut from punches and she couldn't open them for two days.
2) She meant to say that she didn't open her eyes for two days because she was unconscious.
3) It took her two days to remember how to open her eyes.
It's scary how much I think 3 is the correct option.
