I wish the author was a little less determined to impress with ridiculously obscure vocabulary. Like he swallowed a thesaurus or was prepping for the SAT while he wrote this. Some of the wording seems just pretentious - arriviste, timbales, ortolans, sybaritic, opprobrium, etc. I can't remember the last time I used the dictionary function on my Kindle this many times in a single book - and I'm only half way through!

I started this a while ago and have been enjoying it in bite-size bits. I really enjoy social histories focused on food. And this is an interested twist on that approach. Just defining what "American" cuisine is can be awfully complicated. I did find it both interesting & sad that so many of the "traditional" colonial foods no longer appear on menus because we were apparently eating (creating?) endangered species...
