I feel like I might be losing my mind. Does the author truly not understand that ALL food is broken down into glucose molecules during the digestive process? Why does he seem to state, right after agreeing that gluten is a protein, that gluten is not a protein? What is happening? I might have to stop reading this if his ability to edit and correct first draft misstatements does not improve.
