Scott, please do NOT take an existing edition and change it into a different one. I have reverted it back to a Kindle edition, and added the paperback as a new edition.

The only cover changes that don't constitute an alternate cover edition scenario are covers that have literally nothing to do with the book (and so need to be deleted anyway) or pre-publication cover changes.
(Semi-related note: also remember to never change ISBNs; instead, details should be corrected to reflect the ISBN. The only time an ISBN should be changed is when it's truncated or otherwise invalid.)

I get confused by the phrase 'different edition' because to me it's the same book with a new cover.
By the way, I haven't updated the paperback cover yet, only the kindle edition.
If people have my book on their shelves, will they see the new cover at all?

Which is why we do not change covers on books that have been published but add a new edition with the new cover, so the people that buy the book in the future can shelve the cover they bought and read
People who have the old cover shelved can look at the new cover in the other editions section if they choose but since they have bought and read the old covered version it is often irrelevant to them about a new cover

That is, if someone did a search for Night of the Purple Moon, the book profile with the new cover should show up...with the older black/purple one showing up as another edition.

Unfortunately that is something we have no control over. The edition that shows in search or on the authors page is the edition that has been added by the most users. When the new edition gets added more times than the older one (as Paula said, people usually like to add the edition with the same cover they have) it will become the edition to show up.
