Where the Noah respectively have offensive and defensive differences, the Espada are more all around. I'm pretty sure Fiddler is poisonous, but would that really do the Espada?

Tyki isn't alone with the organ removal though. Syzeal in his release state could make little dolls and copies of people. There were three instances in which he used them.
I'm suddenly forgetting character names, no wait got one.
His first victim, sorta, that he used that on was Uryu. He didn't kill him though.
So organ removal, in a sense, is cancelled out on both sides.
For speed, they have Ulquiorra, Haribel, Stark, and Grimmjow. They also use double step constantly.
As for the flying, the Espada float in midair most of the time they're shown in the arc.

I think the Noah have the advantage with the use of the akuma, because the Espada can't really control their peers.
