Split Infinity and Dream Park. Dream Park is really straight science fiction but much of the book is set within a fantasy role-playing game so I think it qualifies in spirit.
Much as I dislike Christopher Stasheff's work, The Warlock in Spite of Himself is the story of a space traveler who discovers a colony planet where they have an Elizabethan culture which interprets their own psychic powers as magic.
The Saga of Recluce series by Modesitt L.E. Jr. has elements of both. There are hints of it in the first few books and book six,Fall of Angels, actually starts aboard a starship in space before the crew becomes marooned on a primitive "fantasy" planet.

In other words from starships to dragons.
well The Speed of Darkness has scientific animal testing on fantasy creatures, so I guess you could almost call it both
