I've made a lot of successful recipes from this book but I just wanted to share that yesterday I made the peanut butter cookies and completely forgot to add in the vegan butter. They actually turned out pretty well, just slightly drier than usual but still very chewy, flavourful and yummy! Everyone is eating them like they are regular cookies so you could probably cut the fat in half and still have a great cookie.

Lisa Vegan (lisavegan) Lee, Thanks for that tip. It's good to know. I've definitely noticed that with many savory dishes. Leaving out the oil or adding in just a dab, and the dish tastes (to me) just as good, sometimes a bit different but just as delicious, or even more so.

Jayme (jayme-reads) This has been my go-to baking book for a long time now. My favourite thing out of it that I make all the time isn't even baking though...I love the chai tea!

The Hearty Spiced Cocoa Muffins are just so super good too. Chocolately goodness and then right after you finish your bite, a little spciy heat at the end.

Yesterday, I finally made the date bars. I've been craving these for months. The flavour was good, not outstanding and there was far too much oatmeal base/topping for the amount of date filling. I would cut it back by about 1/3 or double the amount of dates.

Blueberries | 7 comments I love the chocolate cake recipe from this book, it is really basic but gorgeous, it never fails to impress at family gatherings! I keep it in the notes section of my phone just in case people either ask for a simple vegan cake recipe or give out to me about how complicated vegan baking is!
