I wonder if your book could have been published in the same series as this beautifully illustrated anthology of Sci-Fi mutation stories, Mutants. They were published by Raintree as Science Fiction Shorts.ETA: WorldCat seems to show the most information about this series. A list of the series' titles can be found here:

Unbelievable luck! I *just* Googled "sci fi art of the 1970's image" and wham! The very first image came right out of that book. Going to dig into the links now. Here's the web page with the image I described above and man that's pretty close (to me anyway).

Unbelievable, this almost never happens. Yes, that *one* illustration led me straight to the series, they were called the "Terran Trade Authority" books, described in Wikipedia as:"...a connected space-opera milieu, describing the future history of mankind's expansion into the galaxy, presented in the guise of official handbooks by the trade organization from which the setting takes its name."
It seems these books are out there, so now my wish is for anyone who knows where a used dealer might be that has these.

That's the RPG, modern times. The original hardcover coffee table sized books are easily found at ABEBOOKS or Amazon, especially Amazon.co.uk because the publisher was British.Buying them is a different story though. I've looked around, and the three I wanted I can get, but not cheap.

but got rid of it since then. Big mistake!

I only remember one of the stories, where the aliens (whoever they were) that we were in space battles with had a way of shutting down high-tech navigation and weapons computers, and the heroes were forced to return to "manual control."
The two offending ships emitting these waves were eventually found (hiding in a nebula?) and destroyed. They looked in the illustrations like a couple of spheres on a straight hull, but with big panel antennae.
It's the artwork I remember most, and would treasure being able to show my kids. The stories were all good too.
