Hester | 1 comments I love "Soup:Superb Ways with a Classic Dish" by Debra Mayhew. It is really topnotch. While not every single recipe is a winner, it is amazing how many easy, healthy ones are.

I have had this book for a number of years...

New Covent Garden Book of Soups New, Old and Odd Recipes by New Covent Garden Soup Company

...and found it to be a valuable resource. Its chapter headings are helpful (Reviving, Exotic, Chilled, Warming...) and they hold an extremely varied choice.

As an added bonus, it has a diary section where you can make short notes against each recipe.

You may need to do some UK ingredient-Googling if you don't know what a beetroot is! :-)

I have just looked up 'red beet' on Google and, yes, they are one and the same thing!!!

Amazon do sell the book in the US and there are other titles by the same company:

Having said all of that, I tend to make up my own soups with whatever is available locally AND in season.
