Sally (mrsnolte) Pretend you're on Top Chef. This is what ingredients you've been assigned:


I have all sorts of squash and an eggplant. Some new celery and half a bunch of spinach. No cheese, but I do have milk. What to make?

Valerie Donna's sounds great (mmmm, roasted vegetables), but I was also thinking that you could do a quick stir-fry with the squash, eggplant and spinach (with spices or flavorings of your choosing) and serve over rice or couscous.

I'm getting hungry.

Stamatia | 19 comments Do you know Donna we traditionally cook this dish you suggested without the pasta and eat it as a summer dish with a side of feta cheese. We call it Briam

Leslie Hickman (bkread2) well after roasting all the veggies you could make a marvelous white sauce with...

1 tbls butter
1 tbls flour
3/4 cup milk
dash of salt

heat up and then pour over the veggies! That way you use the milk and get that all important protein and vitamins!

Will Kester | 865 comments Now this is my type of cooking! Can you believe there are those who have to go to the store for every meal they make?

I love the challenge of taking what I have and turning it into something new, unusual, delicious, and then tomorrow I go to the store and buy the place out. Next week, a new challenge, when the pantry is a bit bare, again.

I am going to the fridge, collecting all the veggies that are in there and making this for dinner..w/feta instead of pasta!

Stamatia - would love to see you post some of the wonderful Greek veggie/bean dishes. Just starting to really cook with beans.
