What is the accepted thing to write in the 'Publisher' field for novels that were self-published? Will 'Self-published' suffice, or should I put the author's name?

I think the standard is to use the name of the printer.

What if that is unknown? Should I just leave the field blank?

The author's name is fine. So is leaving the field blank.
